Polysaccharide-based coatings are an alternative to synthetic coatings for fruit conservation. On this study, we aim to evaluate the physical and chemical characteristics of breadfruit starch for coating using glycerol, sorbitol, and mannitol as plasticizers. We applied coatings composed of 7% starch and 2% plasticizers to cherry tomatoes, and evaluated the storage during 12 days at a temperature of 18 °C. The breadfruit starch had an amylose content of 27.17%, granular size of 0.85-0.87, a gelatinization temperature of 75.10 °C, characteristics of standard starch type B and low syneresis. Coatings composed of glycerol and sorbitol showed a reduction in mass loss and delayed ripening. Glycerol and sorbitol are recommended for preparing coatings based on breadfruit starch for post-harvest storage of tomatoes.
Heat-moisture treatment is type of physical modification that which cause changes in the technological characteristics of the starch. One of the sources of starch that presents potential of use of this treatment is sweet potato of the variety 'Rainha' (Ipomoea batatas). Therefore, the objective of this work was extract the sweet potato starch, apply the heat-moisture treatment in different relative humidity conditions (15, 20, and 25%), and characterize the starches as to water absorption capacity, morphology and crystallinity. Starch extracted from sweet potato resulted in a product of high purity. All modified starches showed a higher water absorption capacity when compared to native starch. The morphology of the starch granules remained unchanged after the modification and the same was observed with respect to the crystallinity. However, modified 15% moisture starch showed significant changes in the amylose content, water absorption, and crystallinity, these characteristics extend the use of this starch, for use in foods.
The present article analyzes the category of “sexual exploitation” based upon the practices that are generally pointed to as part of this category, paying particular attention to its implications and effects on the lives of adolescents and upon state, social movement, and academic abilities to understand the social relationships framed by this category. Our analysis is based on ethnographic fieldwork carried out between 2010 and 2015 among state agents and youth in the sex markets of two Brazilian cities in the Amazon border region. Our empirical data are connected to national and international literature, institutional documents, and our participation in educational activities regarding “sexual exploitation”. Our work indicates that “sexual exploitation” has been institutionally constructed as a poorly defined device that mobilizes conservative moralities regarding youth, sexuality, money, mobility, and gender experimentation. We also find that the youth involved in sex markets do not recognize the legitimacy of the policies carried out in the name of “combatting anti-sexual exploitation”. We conclude that the performative production of “sexual exploitation” as a logic of governmentality feeds back into an institutional grammar of distancing, perplexity, immobility, and excuses. This grammar does not contemplate—let alone care about—the gender experiences, sexualities, economic lives and affective troubles of the youth it targets for surveillance and tutelage.
