One of the important tasks facing agriculture is to increase the production of high quality grain. It is known knowledge that the variety is a dynamic biological factor capable of realizing its genetic potential with a different combination of environmental factors and can act as a biological foundation for the production of high quality grain. The forecrop in modern agriculture acts as an independent factor in increasing grain yield and quality. The purpose of the current study was to estimate protein and gluten content in grain of winter bread wheat varieties of intensive type when sown after maize for grain and sunflower in the conditions of the Rostov region. The objects of the study were 9 winter bread wheat varieties of the intensive type developed in the FSBSI “ARC “Donskoy”. The study was carried out in the fields of the department of winter wheat breeding and seed production in 2018–2020. There were identified the varieties that formed the largest percentage of protein in grain on average over the years of study. They were the varieties ‘Etyud’, ‘Yubiley Dona’ and ‘Shef’ (12.44–13.06%) sown after maize for grain, and the varieties ‘Rubin Dona’, ‘Shef’ and ‘Zodiak’ (14.09–14.33%) sown after sunflower. There have been identified the varieties ‘Zodiak’ and ‘Yubiley Dona’ with the largest amount of gluten in grain on average over the years of study. They produced 24.63%, 25.53%, respectively after maize for grain; after sunflower they produced 28.20%, 27.66%, respectively. The results of two-way analysis of variance proved a greater effect of the factor ‘forecrop’ on protein and gluten content in grain of winter bread wheat than the effect of the factor ‘variety’ and their correlation.

Introduction. Wheat is the main grain cropwhich is used for fodder and food purposes in most countries of the world. Flour is the main product of wheat processing, it is subject to a number of quality and safety requirements depending on the use. The purpose of the current work was to identify varietal traits and the effect of the forecrops on the formation of technological properties of grain and flour of winter common wheat varieties, thento select the best of them according to the studied properties.Methods. There were estimated the technological properties of 17 winter common wheat varieties (Triticum aestivum L.) developed by the Agricultural Research Center “Donskoy”, 10 of them were included in the State List of Breeding Achievements, 7 of them are currently being studied. The indicators of the technological, flour-milling, biochemical and physical traits of grain were assessed in accordance with the GOSTs.Results. There has been established that for the entire period the varieties formed a large nature grain weight and corresponded to the first quality class according to the two studied forecrops. As a result of the conducted study there was found out that the choice of a forecrop affected protein percentage in grain and flour. There has been identified varieties ‘Zhavoronok’, ‘Podarok Krymu’, ‘Zolotoy Kolos’, ‘Ayuta’ and ‘Premiera’ had high flour properties according to the technological efficiency of milling (E) after both of the studied forecrops. The varieties ‘Zhavoronok’, ‘Podarok Krymu’ and ‘Premiera’ were characterized by high values of flour-milling estimation (MS).
There have been presented the study results of the biochemical composition of the green mass of sandy sainfoin (Onobrychis arenaria) samples developed by the FSBSI Agricultural Research Center “Donskoy”. The purpose of the current study was to identify the variability of the content of raw nutrients: protein, oil, fiber, ash, BEV in the green mass of sainfoin varieties and lines, to determine the amino acid composition of protein and to identify the best samples for the studied traits. The study was carried out in the period of 2017–2021. The variety ‘Zernogradsky 2’ was used as a standard variety. Biochemical analyzes were carried out in the period ‘budding stage – blooming stage’. The chemical composition of the selected samples was carried out in accordance with the methodology and GOSTs. The maximum crude protein percentage was determined in promising lines ‘Sin 8/95’ (15.38 %) and ‘Sin 13/95’ (14.72 %). There was found that the varieties ‘Veles’ (10.6 %), ‘Atamansky’ (14.1 %) and the lines ‘Sin 13/95’ (11.8 %), ‘Sin 8/95’ (16.9 %) were characterized by a high concentration of raw ash. The optimal fiber content was established in the varieties ‘Atamansky’ (29.73 %) and ‘Veles’ (29.61%). As a result of determining the amino acid composition of protein, there was found that the line ‘Sin 8/95’ (68.5 g/kg) and the varieties ‘Zernogradsky 2’ (62.3 g/kg), ‘Veles’ (52.5 g/kg) were distinguished by the collection of essential amino acids. The varieties ‘Veles’ (75.0 g/kg), ‘Zernogradsky 2’ (66.5 g/kg) and the line ‘Sin 8/95’ (66.4 g/kg) were distinguished by the number of non-essential amino acids. The line ‘Sin 8/95’ (134.9 g/kg) and the varieties ‘Veles’ (127.5 g/kg), ‘Zernogradsky 2’ (128.8 g/kg) were characterized by a high total collection of amino acids. There was determined that crude protein percentage (from 4.3–18.4 %), fiber (7.8–16.9 %), dry matter (4.5–13.1 %) and BEV (9.6–15.9 %) were characterized by slight and medium variation in values. The content of crude ash (9.6–25.2 %) and crude oil (7.5–27.8 %) had weak, medium and strong variations depending on the variety and line. The study of the biochemical composition of sainfoin made it possible to establish varietal differences and variability of traits that characterize the nutritional value of the feed. The varieties ‘Veles’, ‘Zernogradsky 2’ and the promising line ‘Sin 8/95’ were found to have the best quality traits, which could be recommended for use in the breeding process as sources of useful traits and properties.
