RESUMO -Emulsões são sistemas heterogêneos instáveis, que propicia a ocorrências de diversos fenômenos de desestabilização. O presente trabalho propôs um planejamento experimental para análise de estabilidade de emulsões água em óleo (A/O), usando diesel, heptano ou metacrilato de metila na fase oleosa através de uma análise baseada na varredura da turbidez. Os resultados indicaram, quando olhados em conjunto, que o aumento do teor de surfactante, a redução de quantidade de fase dispersa e da velocidade do cisalhamento contribuem positivamente com a estabilidade das emulsões A/O. Ademais, os aspectos mecânicos controlaram a estabilidade das dispersões em meio mais hidrofóbico e os aspectos químicos, em meio mais hidrofílico.
