Este artigo analisa a abordagem e a pesquisa sobre a alimentação no âmbito educacional indígena. Para tal, utiliza pesquisa bibliográfica mediada por análise documental. Situa a alimentação enquanto um patrimônio histórico, cultural e imaterial dos povos indígenas, que transcende fatores biológicos e se consolida na conjuntura de representações, saberes e práticas ancestrais. Apresenta o estado do conhecimento da pesquisa em alimentação indígena no Brasil, sob um recorte temporal de dez anos. Reflete sobre a abordagem da alimentação na educação escolar indígena, expressando seus desafios e potencialidades. Consideramos que a alimentação indígena enquanto patrimônio, contempla a historicidade e aspectos sociopolíticos, o que exige a reivindicação de direitos essenciais em meio a um sistema que gera injustiças e desigualdades. Evidenciamos que a produção acadêmica sobre alimentação indígena no Brasil, ainda se apresenta como um cenário incipiente, e escasso quando buscamos estudos com viés educacional. Entendemos que através da proposta intercultural presente na educação escolar indígena, a aprendizagem e o compartilhamento de experiências proporciona a socialização dos saberes alimentares, mas para isso, o engajamento da comunidade local, uma gestão escolar indígena, a formação inicial e continuada para professores indígenas e não indígenas, e sobretudo, o apoio do Estado, são elementos imprescindíveis.
Leveduras do gênero Hanseniaspora são reconhecidas por sua contribuição aromática para sidras, fermentados de frutos e vinhos. Para uma boa preservação das culturas de leveduras é essencial manter as propriedades morfológicas e fisiológicas das estirpes, independentemente do método de armazenamento escolhido. O congelamento a -80ºC e a liofilização são métodos muito utilizados para preservação de microrganismos a longo prazo. O presente trabalho teve como objetivo avaliar as características fisiológicas e morfológicas de duas estirpes de leveduras utilizadas na indústria de bebidas fermentadas (Hanseniaspora uvarum e Hanseniaspora guilliermondii), submetidas à conservação prolongada por congelamento a -80°C e liofilização, verificando a eficácia desses métodos de preservação. As recuperações das cepas foram realizadas em dois períodos distintos, sendo realizado teste ecométrico do meio de cultura usado na replicação e manutenção das cepas, avaliações morfológicas de crescimento em meio sólido e líquido, avaliações bioquímicas envolvendo fermentações de carboidratos e testes de assimilação de diversos compostos. Os resultados evidenciaram a seletividade do meio de cultura Ágar Malte Extrato de Levedura (YMA) para as cepas estudadas. No perfil bioquímico a avaliação das cepas evidenciou diferenças na capacidade de fermentar a glicose e outros açúcares como também na assimilação de citrato, nitrato e hidrólise do amido, entretanto, as demais avaliações bioquímicas não sofreram variações quando comparadas à dados da literatura. Portanto, as características morfológicas e fisiológicas das cepas de leveduras estudadas, após sofrerem preservação a longo prazo, permanecem viáveis, proporcionando o uso dessas estirpes para a produção de compostos aromáticos em bebidas fermentadas. Além disso, a pesquisa ressalta o benefício da utilização tanto do congelamento a -80ºC quanto da liofilização para a manutenção de H. uvarum e H. guilliermondii por longos períodos.
Este artigo discute a teoria histórico-cultural e sua aproximação com a escolarização indígena paranaense, permitindo a compreensão da abordagem vygotskyana e sua contribuição para a continuidade na valorização dos saberes alimentares kaingang. Utiliza de revisão bibliográfica para a obtenção do corpus teórico, sugerindo que a construção de currículos, projetos e atividades pedagógicas em acordo com as realidades antropológicas, medicinais, filosóficas e alimentares dos povos indígenas se potencializa na perspectiva que considera o social e o cultural como elementos importantes da existência e do desenvolvimento humano, resultados dos processos de interação.
