Recently, studies about smoked food tend to identify harmful compounds that potentially appear within the smoking process. The process, conducted in a smokehouse, closely corresponds with the design and method. This paper presents a smokehouse designed by integrating a biomass furnace, a heat exchanger, a cyclone separator, and a smoking chamber. The design target was to obtain a smoking system that produces clean smoked fish. The design and construction phase and the performance tests phase are discussed in this paper. The energy source used was coconut shells, fed into the furnace at predetermined amounts, to achieve the desired temperature. The performance tests were done using skipjack fish, whose weight ranged from 0.7–1.0 kg/head. The results showed that the smoking system was able to complete the smoking process of the fish in 13 h with 20.1% moisture reduction. The temperature of the smoking chamber varied from 70 °C to 108 °C and the internal fish temperature during the cooking phase ranged from 71 °C to 80 °C. The temperature performance was supported by a heat exchanger with an effectiveness of 0.63 and a cyclone separator, which channeled the smoke–heat flow, separated fly ash with particle sizes between 0.2–600 µm and tar. Based on the test results, the indirect smoking system developed and tested in this study is shown to be able to perform the smoking fish process satisfactorily and produce clean smoked fish.
Pangkalan Pendaratan Ikan (PPI) Torobulu merupakan salah satu pelabuhan perikanan yang ada di Kabupaten Konawe Selatan yang berfungsi sebagai pelabuhan bongkar muat dan tempat untuk menjual ikan hasil tangkapan. PPI Torobulu diharapkan dapat menjadi salah satu pusat pengembangan perikanan tangkap di Konawe Selatan melalui strategi pengembangan dan pengelolaan sesuai dengan tingkat pemanfaatan dan kondisi serta kebutuhan saat ini. Penelitian ini bertujuan untuk menentukan tingkat pemanfaatan fasilitas pokok dan fungsional serta alternatif strategi dalam pengelolaan PPI Torobulu. Tingkat pemanfaatan fasilitas dianalisis dengan membandingkan antara kapasitas yang tersedia dengan pemanfaatan atau kebutuhan berdasarkan kondisi saat ini, sedangkan strategi pengelolaan dikembangkan dengan menggunakan analisis kekuatan, kelemahan, peluang, dan ancaman (SWOT analysis). Data penelitian antara lain terdiri dari data produksi dan kunjungan kapal selama 5 tahun terakhir dan data jenis dan jumlah serta ukuran armada kapal yang ada di PPI Torobulu.Data diperoleh melalui pengamatan dan pengukuran langsung fasiltas di lapangan, serta wawancara dan pengisian kuesioner dari narasumber yang dipilih dengan menggunakan metode sampling kuota. Hasil penelitian menunjukkan bahwa ada fasilitas yang tingkat pemanfaatannya telah melebihi kapasitas maksimum (dermaga), di lain pihak masih ada fasilitas yang belum termanfaatkan sepenuhnya (kolam pelabuhan, gedung tempat pelelangan ikan, BBM) dan tidak tersedia sesuai kebutuhan atau rusak (instalasi air bersih, pabrik es).Strategi terpilih untuk pengelolaan PPI Torobulu adalah pengembangan atau pembangunan fasilitas yang belum memadai, memantapkan peraturan atau regulasi tentang PPI, dan mendorong perbaikan sistem pemasaran hasil perikanan yang lebih baik.
This study explores the relevance of organizational communication dimension to the performance of lecturers. The population in this study is all permanent lecturers at Muhammadiyah University of Makassar. Based on sampling techniques, the obtained sample of 97 permanent lecturers, but there are 14 data containing outliers, so that you can proceed to the analysis phase only 83 questionnaires. Hypothesis testing is done using SEM (Structural Equation Modeling) with WaphPLS Ver. 5.0 as research equipment was used to test the study hypothesis. The results of the study provide evidence that the quality of information media positive and significant impact on the performance of lecturers. Accessibility of information is good, resulting in an increase in the performance of lecturers. Information dissemination conducted by universities is relatively low, but significant effect on improving the performance of lecturers. Load information owned by the university is relatively low, but significant effect on improving the performance of lecturers. A series testing of the integrated design of biomass furnace and heat exchanger was conducted to see the performance using methods such as the effectivenes-number of transfer unit (e-NTU), the efficiency as a function of Fin Analogy Number (h(Fa)) and the log-mean temperature difference (LMTD). The biomass furnace as a plant to generated heat produced value of energy 25,600W with the burning rated of corncob 7.03 kg/hour. The calculation of amount of heat transfer to the cold fluid in the tubes as function of fluid characteristic, mass rated of dry air in a longitudinal section was 11,285W. The effectivenes as the ratio of actual heat transfered to the absolute maximum heat that can be transferred in a heat exchanger was 0.90. The efficiency of heat exchanger as a clear measurement of performance system was 0.78. The efficiency as a function of fin analogy number, employed several variable as it function; such as the product of UA, minimum heat capacity rate (Cmin) and the capacity ratio (Cr). Another performance showed by correction factor with value of 0.5 indicated that the heat exchanger was not a pure of counter-flow but made of cross-flow in the single segmental baffle with turbulances pattern (Re: 8.524 > 6.000).ABSTRAKSerangkaian pengujian terhadap desain terintegrasi tungku biomassa dan penukar panas telah dilakukan untuk melihat performansinya menggunakan metode efektifitas-NTU (e-NTU), efisiensi sebagai fungsi dari fin analogy number (h(Fa)) dan beda temperatur rata-rata logaritmik (LMTD). Tungku biomassa sebagai pembangkit panas menghasilkan energi senilai 25.600W dengan laju pembakaran tongkol jagung 7.03 kg/jam. Perhitungan laju pindah panas ke fluida dingin dalam pipa sebagai fungsi dari karakteristik udara, laju massa melalui luas penampang laluan diperoleh sebesar 11,285W. Efektivitas sebagai rasio laju pindah panas aktual dengan panas maksimum yang dapat dipindahkan dalam sebuah penukar panas diperoleh sebesar 0,90. Efisiensi penukar panas sebagai ukuran jelas performansi sistem diperoleh sebesar 0,78. Efisiensi dalam hal ini adalah fungsi dari fin analogy number sedangkan fin analogy number merupakan fungsi dari beberapa variabel seperti hasil perkalian UA, laju kapasitas panas minimum (Cmin) dan rasio kapasitas (Cr). Performansi lainnya ditunjukkan melalui nilai faktor koreksi sebesar 0,5 menunjukkan bahwa penukar panas tidak sepenuhnya merupakan aliran-melawan melainkan terbentuk aliran-silang khususnya di dalam ruang antar sekat dengan pola turbulensi (Re: 8.524 > 6.000).
The purpose of this research was to observe the effect of type chilli and concentration of CMC toward Vitamin C and a solid total of smoked fish chilli sauce. The treatments were: A Type of chilli (A1 cayenne chilli, A2 cayenne, and curly chilli, A3 curly chilli; B concentration of CMC (B1 CMC 0.5%, B2 CMC 1%). The parameters analysed were, vitamin C used titration and dissolved solid used gravimetry method. The data were used Anova testing. The result showed that treatment chilli combination significantly influence to increased Vitamin C compared without combination. Vitamin C A2B1 2.38% and A2B2 2.46%. The concentration of CMC non-significant to Vitamin C. Type chilli and concentration CMC non-significant influence to dissolved solid. The all treatment value of total solid > 40 as standard of chilli. So A2B2 could be used as good formula smoked fish chilli sauce to increased vitamin C and dissolved solids.
