Maisquellstärke im Austausch gegen Sonnenblumenöl oder Rindertalg als Träger der Nicht‐Protein‐Energie im Futter für Regenbogenforellen (Salmo gairdneri, R.). I. Zuwachs und Verwertung der Energie und des Proteins
11 Futtermischungen, in denen jeweils 40% der Bruttoenergie als Casein/Gelatine vorlagen, wurden an je 2 Gruppen von Forellen gefüttert. Die nicht aus Protein stammende Energie lag vor als Maisquellstärke, als Sonnenblumenöl, als Rindertalg oder als Mischung von Quellstärke und einem der beiden Fette. Futtermischungen, die sowohl Quellstärke als auch Fett enthielten, bewirkten höheren Zuwachs und bessere Verwertung der Energie und des Proteins als diejenigen Futtermischungen, die nur eine Quelle für Nicht‐Protein‐Energie aufwiesen. Wurden Mischungen mit niedrigem Fettgehalt gefüttert, so erfolgte während des Wachstums eine Netto‐Synthese von Fett, bei den Mischungen mit hohem Fettgehalt dagegen erfolgte ein Netto‐Abbau. Bezüglich Zuwachs und Verwertung der Energie war Sonnenblumenöl dem Rindertalg nur geringfügig überlegen.

Maisquellstärke im Austausch gegen Sonnenblumenöl oder Rindertalg als Träger der Nicht‐Protein‐Energie im Futter für Regenbogenforellen (Salmo gairdneri, R.). II. Körper‐Zusammensetzung
Futtermischungen mit 40% der Bruttoenergie in Form von Protein wurden an Forellen gefüttert. Quellen für die übrige Energie waren Maisquellstärke, Sonnenblumenöl, Rindertalg oder unterschiedliche Mischungen der Stärke mit einem der Fette. Keine Unterschiede wurden gefunden beim relativen Anteil der Muskulatur an der Körpermasse. Obwohl mit steigendem Fettgehalt im Futter der Fettgehalt im Ganzkörper stieg, wurde kein Einfluß auf die Gehalte an Protein und Fett in der Muskulatur festgestellt.
Die Muster der Fettsäuren im Gesamtfett der Forellenkörper zeigten keine großen Unterschiede zwischen denjenigen Gruppen, die Rindertalg erhielten, oder der fettfrei gefütterten Gruppe. Vergleichsweise war in den Gruppen, die Sonnenblumenöl erhielten, der Anteil der einfach ungesättigten Fettsäuren erniedrigt. Dies wurde dadurch ausgeglichen, daß bei Mischungen mit bis zu 24% der Energie aus Sonnenblumenöl die mehrfach ungesättigten Fettsäuren und bei mehr als 30% der Energie aus Sonnenblumenöl die gesättigten Fettsäuren in ihrem Anteil erhöht waren.
