Se desarrolló un snack (botana) saludable a base de maíz (Zea mays L.) y frijol (Phaseolus vulgaris L.), tomando en cuenta tanto la preferencia de los consumidores como su valor nutricional. Para fortalecer su citado valor nutricional se le adicionó harina de soya (Glycine max L.), ya que el objetivo de este trabajo es formular un snack con la mayor cantidad de harina de soya sin ser percibido su sabor por los futuros consumidores por lo que utilizando un análisis sensorial de la prueba discriminativa de sensibilidad llamada Prueba de Umbral de Detección, se obtuvo el valor máximo de harina de soya que se le puede adicionar al producto sin que el usuario lo perciba. Fueron cinco los panelistas y se desarrollaron cinco productos con distinta concentración de harina de soya (10%, 15%, 20%, 25% y 30%), se realizó una tabla con las diversas concentraciones y el porcentaje de panelistas que percibieron el sabor a la soya en cada concentración, con estos datos, por medio de Regresión Lineal, se obtuvo la ecuación de la recta del porcentaje del producto así como de los porcentajes de panelistas que lo percibieron obteniendo que la máxima concentración de harina de soya a utilizar sin percibir su sabor es de 12.502% del total de las materias primas de las que se compone el snack. Para corroborar el valor obtenido se pretende posteriormente desarrollar otra investigación elaborando el producto con la formulación obtenida y presentarlo en un panel de degustación.
