The purpose of the research was to investigate the carcass composition, meat quality and chemical composition of pigs from two pork chains for the production of traditional dry/cured products in Croatia. The trial involved 24 Black Slavonian barrows reared outdoors (NAT chain) and 24 PIC hybrid barrows kept under industrial conditions (INT chain); all animals were raised to 160 kg of live weight. After slaughter, carcass and meat quality traits were measured and samples for chemical composition were taken. After that, a full dissection of the carcasses was performed. The pigs from the INT pork chain had leaner carcasses, higher bone percentages, and lower fatness levels than the NAT carcasses. Pigs from the NAT chain exhibited a more desirable meat quality. No differences were found in moisture, and samples from the INT chain exhibited higher collagen and protein percentage. Muscles from the NAT chain had higher IMF and MUFA levels, and the SFA content was lower than in INT pork. Despite the superior carcass traits of the pigs from the INT chain, pigs from the NAT chain demonstrated better suitability for the production of dry/cured products.
The aim of the research was to investigate the influence of terminal sire line (TSL) and male category (MC) on carcass and meat quality of commercial fatteners. The study was performed on 180 pigs originating from three terminal sire lines: A (Pietrain × Large White), B (pure Pietrain), and C (Pietrain × Duroc × Large White), being assigned to three groups according to MC: immunocastrates (IC, n = 60), surgical castrates (SC, n = 60) and entire males (EM, n = 60). TSL affected most of the carcass and meat quality traits, together with the androstenone concentration. At the same time, MC had a significant effect on fat thickness, ham circumference, drip loss, cooking loss and androstenone and skatole concentrations. A significant interaction effect was observed for carcass length and ham circumference, as well as for most of the measured meat quality traits (except cooking loss, CIE L*, CIE b*, and Warner Bratzler Shear Force (WBSF)). Among the three investigated sire lines, immunocastration was shown to be most beneficial for fatteners sired by the TSL C. However, if deciding to raise EM, fatteners from the TSL B are recommended in terms of carcass and meat quality, although strategies for avoiding boar taint in their carcasses must be taken into consideration.
The study investigated the effect of on-farm rest period (RP) on carcass composition, meat quality, and stress indicators of culled sows. The study was conducted on 84 Large White × Landrace culled sows, which were divided into seven groups (n = 12) with respect to the duration of the on-farm rest period: no rest period (N-RP) group and 1 to 6 weeks of on-farm rest period (1–6 RP). After completion of the on-farm RP, each group of culled sows was slaughtered and the carcass and meat quality traits were determined. Sows from 6-RP had a significantly higher dressing percentage and backfat thickness and, together with sows from 5-RP, a higher shoulder weight. The highest shoulder percentage was found in the 3-RP and 4-RP groups, while 1-RP had the highest percentage for the belly–rib part. At the same time, RP influenced the final pH values (pH24 SM and pH24 LL) measured in the longissimus thoracis et lumborum (LT) and in the musculus semimembranosus (SM), as well as drip loss, thawing loss, cooking loss, and tenderness. As far as the stress indicators are concerned, statistical differences between groups were only found in the cortisol level, which was lowest in 6-RP. The results show that RP has a positive effect on meat quality traits and carcass composition. In addition, prolonged RP has a positive effect on the levels of stress indicators.
