RESUMEN Se evaluó químicamente el perfil de aminoácidos y contenido de vitaminas según la metodología oficial, las harinas crudas de batata y tratadas térmicamente por cocción. Se obtuvieron harinas crudas con contenidos de carbohidratos totales de 84,81%, almidón 50,65%, proteínas de 2,94%, contenidos de grasa cruda de 0,34%. Se encontraron diferencias estadísticamente significativas (p≤ 0,05) por efecto de los tratamientos aplicados. Se redujo el contenido de humedad, cenizas, carbohidratos totales y azúcares reductores. Se observó un incremento en el contenido de fibra cruda. Predominaron en todas las harinas los aminoácidos ácido glutámico y ácido aspártico, el aminoácido limitante fue triptófano. Por efecto de los tratamientos aplicados, hubo diferencias (p≤ 0,05) en la composición de la mayoría de los aminoácidos, incrementando su concentración. El contenido de vitaminas A y C disminuyó por efecto de los tratamientos aplicados (p≤ 0,05). Se concluye que las harinas crudas de batata y cocidas pueden ser empleadas en la formulación de alimentos ya que aportan buenas cantidades de nutrientes.
Con la finalidad de diversificar el uso de almidón nativo y acetilado de camote en la formulación deproductos alimenticios e incrementar el aprovechamiento de estos cultivos, fueron caracterizadosfuncionalmente los polisacáridos obtenidos, mediante los análisis de poder de hinchamiento, sólidossolubles, absorción de agua y propiedades reológicas siguiendo la metodología oficial, se formularonpudines utilizando almidón de camote nativo, acetilado y una mezcla de ambos; azúcar, sal, lechey pulpa de frutas. El postre obtenido fue evaluado sensorial, fisicoquímica y microbiológicamente.Hubo diferencias estadísticamente significativas (p≤0,05) por efecto de la acetilación, se incrementóel índice de absorción de agua, poder de hinchamiento y solubilidad en agua. En las pastas cocidasde almidón acetilado, los parámetros reológicos, temperatura inicial de gelatinización e índice deasentamiento disminuyeron ligeramente, viscosidad máxima e índice de estabilidad aumentaron.Las formulaciones 3 y 8 fueron seleccionadas ya que el producto obtenido presentó característicassensoriales deseadas. Los pudines elaborados con almidón acetilado mostraron diferenciasestadísticamente significativas (p≤0,05) en el contenido de humedad, pH y en el análisis sensoriallos parámetros de consistencia y aceptación global. Los resultados obtenidos mostraron que lautilización de una mezcla de almidón nativo y acetilado fue adecuada para la elaboración de pudinesya que los mismos presentaron buena calidad físico-química y microbiológica, así como una buenaaceptación sensorial.
Con la finalidad de ofrecer una alternativa para la pérdida postcosecha del camote, fueron preparadas harinas por cocción en autoclave y en marmita, caracterizadas funcional y morfológicamente mediante la interpretación de curvas amilográficas y observación de los gránulos de almidón al microscopio óptico. Se encontraron diferencias estadísticamente significativas (p≤0,05) en los parámetros funcionales debido a los tratamientos térmicos aplicados; en la harina cocida en autoclave, la temperatura inicial de gelatinización, viscosidad máxima e índice de estabilidad disminuyeron; mientras que el índice de asentamiento aumento. Con respecto a la morfometría de los gránulos de almidón, la forma predominante en la harina cruda de camote fue la esférica, con una frecuencia de 37%, con tamaño intermedio entre 3 y 5,65 mm. Hubo una reducción del 44% de los gránulos presentes en la harina tratada por cocción en autoclave y del 33% en harina cocida en marmita. De acuerdo con las características funcionales obtenidas se puede recomendar la incorporación de harinas de camote en la formulación y elaboración de alimentos poco viscosos, con buena estabilidad al calentamiento constante y agitación y que requieran de condiciones de refrigeración y congelación, tales como salsas, bebidas, postres, entre otros.
