Naturalne dodatki do żywności (szczególnie barwniki) w porównaniu ze swoimi syntetycznymi odpowiednikami wykazują małą stabilność przechowalniczą. Trwałość preparatów barwiących β-karotenu można w znaczny sposób zwiększyć stosując proces mikrokapsułkowania. Dobór odpowiedniego nośnika mikrokapsułkowanego preparatu pozwala na zwiększenie jego stabilności. Celem badań było określenie wpływu rodzaju i ilości materiału ściany (nośnika) na trwałość przechowalniczą mikrokapsułkowanego β-karotenu. Olejowy preparat β-karotenu otrzymano z marchwi i poddano procesowi mikrokapsułkowania metodą suszenia rozpyłowego. Jako nośniki zastosowano skrobię modyfikowaną (E 1450), gumę arabską, maltodekstryny oraz mieszaniny tych substancji. Barwnik dodawano w ilości 5 % w stosunku do masy emulsji, natomiast materiał ściany w ilości 30 %. Określono wpływ rodzaju materiału ściany na czas połowicznego rozpadu i stałą szybkości reakcji rozpadu β-karotenu. Zawartość β-karotenu na powierzchni, wewnątrz mikrokapsułek oraz w olejowym preparacie oznaczono spektrofotometrycznie. Otrzymano napoje z wykorzystaniem mikrokapsułkowanego β-karotenu i oznaczono ich barwę. Badania prowadzono przez 90 dni. W wyniku przeprowadzonych badań stwierdzono, że najbardziej stabilne były próbki mikrokapsułkowanego β-karotenu otrzymane z emulsji zawierającej gumę arabską i maltodekstrynę w stosunku 1:2. Stwierdzono ponadto, że możliwe jest zastąpienie gumy arabskiej przez skrobię modyfikowaną (E 1450) bez statystycznie istotnych różnic w stabilności preparatu β-karotenu.
