El maíz morado (Zea mays L.), es un importante cereal del Perú, el cual contiene polifenoles, entre los que se encuentran los flavonoides, siendo los más importantes, las antocianinas. La mazorca (olote y grano) está constituida en un 85% por grano y un 15% de olote. Su alto contenido en antocianina, principalmente como cianidina-3-glucosido (C3G), hace que actúe como un poderoso antioxidante natural, anticancerígeno, y antiinflamatorio, además, ayuda a disminuir la presión sanguínea y el colesterol alto, mejora la circulación sanguínea y promueve la regeneración del tejido y es por estos importantes benef icios, que surge la necesidad de comprender el mecanismo de acción de las antocianinas en la salud humana. Por ello, el objetivo del presente trabajo de revisión es describir la estructura química de las antocianinas, tipos y factores que afectan no solo el color sino también su estabilidad. En la segunda parte, se detallaron las diferentes razas y variedades mejoradas del maíz morado con que cuenta el Perú, y la cantidad de antocianinas encontradas con las diferentes técnicas químicas utilizadas. Por último, se describieron las diferentes actividades biológicas de las antocianinas poniendo énfasis en la más importante como un poderoso antioxidante. Encontrando que las condiciones de extracción óptima de las antocianinas son con 1 g de muestra con 15 mL de agua con agitación constante durante 15 min a 90 ºC, resaltando el poder antioxidante alto tanto en sistemas in-vitro como ex‑vivo.
El Perú tiene una gran diversidad de productos agrícolas, debido a la variedad de climas y diversidad geográf ica, por lo que cuenta con siete principales razas del maíz morado. Por tanto, el objetivo del presente trabajo de investigación fue evaluar el rendimiento, las características morfológicas y químicas de cinco variedades del maíz morado, las cuales fueron el INIA-601, maíz morado mejorado MMM (variedad experimental), UNC-47, INIA-615 y PM-581 y la raza Canteño como control en dos niveles altitudinales de 2770 m (Llollón) y a 3140 m (Llanupacha), ambos pertenecientes al Distrito de Ichocán, Provincia de San Marcos y Región Cajamarca en Perú, en las campañas agrícolas 2017/18 y 2018/19. Se evaluaron las variables agronómicas y el contenido de antocianinas. Los resultados muestran que el mejor rendimiento en promedio fue para el INIA-601 con 5.3 Mg ha-1 en Llanupacha y de 4.5 Mg ha-1 en Llollón. Las variedades con mayor altura de planta y mazorca fueron para el MMM (2.33 y 1.2 m) e INIA-601 (2.35 y 1.25 m) en Llollón; mientras que en Llanupacha, resaltaron el MMM (1.93 y 0.88 m) y el INIA-601 (1.9 y 0.88 m), respectivamente. La variedad INIA-615 logró ser la variedad más precoz en el florecimiento femenino y masculino en ambos niveles altitudinales, con 101.5 y 93.3 días en Llollón y con 125.6 y 118.3 días en Llanupacha, respectivamente; además, esta variedad obtuvo el menor porcentaje de pudrición de 2.3% en Llanupacha y 5.9% en Llollón. La variedad INIA-601, se destacó por tener la mayor cantidad de antocianinas tanto en el olote como en las brácteas, presentando (6.7 y 7.5 mg g-1) y (2.9 y 2.5 mg g-1), en Llanupacha y Llollón, respectivamente.
El maíz morado contiene como principal metabolito secundario a las antocianinas, pertenecientes al grupo de los flavonoides polifenolicos, responsables de muchas actividades biológicas principalmente de la actividad antioxidante alta. Se busca identificar maíces morados con buena producción de grano y contenido de antocianinas en el olote y brácteas que generen más ingresos a los productores de la región Cajamarca en Perú, usando tres cultivares en cuatro localidades de la región Cajamarca en Perú. Los resultados muestran el mejor ambiente de producción fue Chala, donde se registró la mayor producción de grano fue en los cultivares INIA-601 (4.38 t ha-1) y MM (3.75 t ha-1). Los mismos cultivares tuvieron las más altas concentraciones de antocianinas tanto en el olote y en las brácteas, con valores de 7.9 y 4.53 mg g-1 para INIA-601 y 7.2 y 2.1 mg g-1 para MM respectivamente, sugiriéndolos como variedades potenciales por el alto rendimiento y contenido de antocianinas.
