Introdução: A farinha de trigo (Triticum spp.) é um insumo milenar e é encontrada até hoje na mesa do consumidor, seja ele do ocidente ou oriente. Por isso, é importante assegurar a qualidade e a segurança alimentar aos diversos consumidores dessa matéria prima. À vista disso, esse estudo analisou o teor de umidade em farinhas de trigo através do método gravimétrico de determinação de umidade com o emprego do calor. Metodologia: Estudo quantitativo que consistiu na coleta de amostras de farinhas de trigo de 7 marcas comercializadas em mercados da região do Recôncavo Baiano. O resultado foi obtido pela diferença entre amostras úmidas e secas. As análises foram executadas em triplicata. Resultados: As análises realizadas nas farinhas de trigo constataram os seguintes teores de umidade nas marcas Confiare (13,76%), Brandini (13,39%), Finna (13,18%), Primor (13,12%), Sarandi (12,98%), Dona Benta (12,96%) e Rosa Branca (12,85%). Conclusão: De acordo com o Regulamento Técnico de Identidade e Qualidade da Farinha de Trigo, realizado pelo ministério de Agricultura, Pecuária e Abastecimento, o teor de umidade máximo na farinha de trigo é de 15%. Não há legislações que definam o teor de umidade mínimo para esse alimento. Portanto, como as marcas analisadas obtiveram teores de umidade entre 12,85-13,76%, não há infração nesses produtos, estando próprios para consumo, pois estão dentro dos limites estabelecidos.
