Objeti vo: Avaliar propriedades erosivas de bebidas industrializadas acrescidas de soja em sua composição nas concentrações pura e diluída, através da mensuração do pH e capacidade tampão. Método: Foram avaliados 07 sabores de bebidas industrializadas (AdeS®): limonada suíça, uva, maçã, laranja, morango, pêssego e original (sem acréscimo de fruta). As bebidas foram divididas em 2 grupos: bebidas puras (grupo I) e bebidas diluídas em 50% (grupo II). O pH inicial foi determinado uti lizando-se de um potenciômetro e eletrodo combinado de vidro. Para a verifi cação da capacidade tampão, foram adicionadas alíquotas de 0,25ml de NaOH 1N, às bebidas puras e diluídas medindose subseqüentemente o pH, até acrescentar 14ml da solução base. Resultados: O pH inicial das bebidas acrescidas de fruta, tanto em sua forma pura (grupo I) quanto diluída (grupo II), apresentou-se abaixo de 4,0, variando entre 3,17 (morango) e 3,73 (limonada suíça), para os puros, e de 3,18 (morango) a 3,82 (limonada suíça) para os diluídos, e apenas o sabor original apresentou um pH acima do críti co (5,5) para o esmalte, sendo este valor estati sti camente diferente dos demais. Não foi observada diferença estatí sti ca entre os pHs dos diversos sabores com fruta na composição tanto em sua forma pura quanto diluída. As curvas de ti tulação demonstraram baixa capacidade tampão intrínseca das bebidas. Conclusão: Todas as bebidas com fruta na composição (grupo I e grupo II), apresentaram pH abaixo de 4,0, e a diluição não provocou alterações signifi cantes de pH. Apenas o sabor original apresentou pH acima do críti co e estati sti camente diferente dos demais. Todos os sabores apresentaram baixa capacidade tampão intrínseca, sendo este comportamento mais evidente nas bebidas diluídas, demonstrando que a diluição pode reduzir o seu potencial erosivo.
O objetivo do trabalho foi avaliar a vida útil de maçãs da cultivar Fuji revestidas com coberturas comestíveis a base de zeínas nas concentrações de 4% de zeínas e 1 e 2% de ácido oléico (v/v). Maçãs com e sem cobertura foram estocadas e submetidas às análises físico-químicas, instrumentais e sensoriais. As frutas revestidas apresentaram menor perda de massa, respectivamente 1,47 e 0,05% para as formulações com 1 e 2% quando comparadas ao controle (2,43%). Maçãs com cobertura a 2% de plastificante apresentaram os menores teores de sólidos solúveis, com valor de 5,7º Brix. Verificou-se aumento significativo do pH de 12,8% para frutas controle e de 4,5% para as frutas com 1% e redução do pH de 7,31% para as frutas com coberturas a 2%, sendo registrado um comportamento inverso para acidez. Durante o armazenamento as maçãs com coberturas a 2% apresentaram maior firmeza (3,1%) do que as do controle (0,95%). Quanto à aceitabilidade, houve diferença significativa para aparência global. Os resultados demonstram que as coberturas de zeínas associadas à refrigeração foram eficientes na preservação global das frutas, através da manutenção dos parâmetros analisados. Observou-se nas frutas revestidas efeito positivo quanto ao retardamento de mudança de cor durante a maturação e no prolongando do aspecto fresco, apesar de uma aparente perda de brilho.Palavras-Chave: cobertura comestível, tecnologia pós-colheita, armazenamento refrigerado, perda de massa, análises sensoriais.
