The role of copper(II) species in the oxidation of inorganic cyanide to cyanate and in the conversion of cyanate or urea into ethyl carbamate was investigated. The oxidation process has been shown to be independent from the dissolved oxygen. Elemental analysis and infrared spectroscopy have shown the formation of a mixed copper carbonate/hydroxide in the process of oxidation of cyanide to cyanate in water/ethanol. The complexation to Cu(II) of cyanate formed upon cyanide oxidation makes the former more susceptible to nucleophilic attack from ethanol, with conversion into ethyl carbamate. Comparatively, urea has a minor role with respect to cyanide in the formation of ethyl carbamate. Therefore, the urea present in some samples of Brazilian sugar cane spirit (cachaça) has been shown to have almost no influence on the ethyl carbamate content of cachaças, which comes essentially from cyanide. Fe(II,III) affords results similar to those found with Cu(II). Some suggestions are presented to avoid ethyl carbamate formation in spirits during distillation.
ETHYL CARBAMATE IN ALCOHOLIC BEVERAGES (CACHAÇA, TIQUIRA, WHISKY AND GRAPE). The presence of ethyl carbamate in cachaças, tiquiras, whiskies and grapes was investigated by GC-MS, monitoring the m/z 62 ion. The external standard method was used for quantitation in 188 samples (126 cachaças, 37 tiquiras, 6 grappas and 19 whiskies). The results of the study for cachaça were analysed considering the geographic origin, distillation type (still or column), bottle coloration (amber or transparent) and ageing. The average contents of ethyl carbamate in cachaças and tiquiras were 0.77 and 2.4 mg L -1 , respectively. These values were higher than the mean concentration found in grapes (0.045 mg L -1 ) and whiskies (0.14 mg L -1 ). On average the cachaças distilled in column tend to present higher values of ethyl carbamate than those from still. In the sampling studied it was not possible to define a correlation between content of ethyl carbamate, bottle coloration and ageing time.Keywords: GC-MS; ethyl carbamate; alcoholic beverages; spirits. . A comparação entre os teores de carbamato de etila em bebidas alcoólicas brasileiras com os limites estabelecidos pelo Canadá é inevitável, em função de este ser, até o momento, o único país a possuir legislação específica sobre o assunto, sendo um referencial para os EUA e para a Comunidade Européia. Em março de 1990, o FDA ("U. S. Food and Drug Administration") publicou nota 11 na qual os produtores de uísques americanos se comprometeram, a partir daquela data, a limitar o teor de carbamato de etila em 0,125 mg L -1 . A presença de 51 compostos voláteis, entre álcoois e ésteres, em aguardentes de cana (cachaça) foi investigada por cromatografia gasosa de alta resolução. Os seguintes compostos foram identificados e quantificados: metanol, 1,4-butanodiol, álcool 2-feniletílico, álcool amílico, álcool cetílico, álcool cinâmico, n-decanol, geraniol, álcool isoamílico, isobutanol, mentol, n-butanol, ndodecanol, n-propanol, n-tetradecanol, propionato de amila, acetato de etila, benzoato de etila, heptanoato de etila, valerato de isoamila, propionato de metila, butirato de propila. O teor médio de álcoois superiores (262 mg/ 100 mL de álcool anidro a.a.) e o teor médio de ésteres (24 mg/100 mL a.a.) em cachaças são menores que os encontrados em outros destilados. O teor médio de metanol em cachaças, (6 mg/100 mL a.a.) é o mesmo que o encontrado em rum e menor em relação ao encontrado em destilados de uva. Com relação aos compostos analisados, não foram observadas diferenças significativas no perfil químico qualitativo das cachaças analisadas.The presence of 51 volatile compounds, among alcohols and esters in Brazilian sugar-cane spirit (cachaça), were investigated by high-resolution gas chromatography (HRGC). The following alcohols and esters were identified and quantified: methanol, 1,4-butanodiol, 2-phenylethyl alcohol, amyl alcohol, cetyl alcohol, cynamic alcohol, n-decanol, geraniol, isoamyl alcohol, isobutanol, menthol, n-butanol, n-dodecanol, n-propanol, n-tetradecanol, amyl propionate, ethyl acetate, ethyl benzoate, ethyl heptanoate, isoamyl valerate, methyl propionate, propyl butyrate. The average higher alcohols content (262 mg/100 mL in anhydrous alcohol a.a.) and total esters content (24 mg/ 100 mL a.a.) in cachaças, are smaller than in other spirits. The average methanol content in cachaças (6 mg/100 mL a.a.) is the same as in rum, but smaller than in wine spirit. No qualitative differences of chemical profile among cachaças have been observed.
