Toutes les études sur les sociétés rurales d'hier et d'aujourd'hui font la part belle au développement des échanges monétaires et au renforcement volontaire ou imposé des rapports de la paysannerie avec le marché. Explicitement (E. Le Roy Ladurie, 1973) ou non, les historiens reprennent à leur compte l'opposition, classique, des pays du Tiers-Monde, entre agriculture de subsistance et agriculture commercialisée (G. Elwert et D. Wong, 1980). Et ceci avec une netteté toute particulière dans le cas de la France médiévale ou moderne, où l'on s'accorde volontiers à reconnaître le poids, précoce et durable malgré tous les efforts des rassembleurs de parcelles, d'une quasi-propriété paysanne enfin libérée par la Révolution de toutes les charges qui pesaient sur elle. Autoconsommation et marché se présentent ainsi comme les deux pôles autour desquels s'organisent les choix productifs de la majorité des exploitations agricoles.
L'appel lancé par les Annales en 1961 a été largement entendu. Mais l'histoire de l'alimentation risque fort de souffrir de son succès. La multiplication des enquêtes pose en effet, pour son développement, une série de problèmes qui gagneront à être clairement posés et abordés franchement.Souvent ponctuelles, les données locales, recueillies au hasard des sources, laissent encore, malgré une accumulation patiente, de larges blancs sur la carte de l'Europe occidentale. Prisonnières de leur précision, elles restent d'autre part difficiles à comparer dans le temps et l'espace : aucune confrontation ne sera possible sans un effort d'unification et d'abstraction.

Never have memory’s tools been more powerful or more efficient, yet never has the relationship between history and memory seemed more uncertain. History has lost its monopoly over the production and conservation of memory; memory has developed independently and is inspiring new partners, for example in science and literature.

Le problème n’est pas de l’imiter ou de le répéter, mais de s’en inspirer librement, pour élaborer des hypothèses à tester sur d’autres périodes et sur d’autres lieux: ou, si l’on préfère, de l’utiliser comme une clef pour ouvrir des portes encore fermées, et non des portes désormais largement ouvertes. Sur ce plan, la voie avait été tracée de façon exemplaire par Denys Lombard, dans le Carrefour javanais: il l’avait fixée dès le colloque organisé en 1985 avec Jean Aubin sur les réseaux marchands en Asie du Sud et du Sud-Est, et l’avait ensuite systématiquement poursuivie jusqu’à la veille de sa mort, avec le colloque organisé en avril 1996 à Kuala Lumpur sur la «Méditerranée du sud-est asiatique».
