Foram feitas análises das emulsões alimentares logo após sua produção e posteriormente testes de estabilidade com temperatura constante, sob refrigeração e ciclos de congelamento e descongelamento. Foram feitas caracterizações da bebida macro e microscópica. Os resultados mostraram que o teste de refrigeração do tratamento A' foi mais estável que A. Os ciclos de congelamento/descongelamento mostraram que A' desestabilizou antes de A. The present study evaluated the functionality of whey protein as an emulsifying and stabilizing agent in oil-in-water systems with the purpose of suggesting the use of whey in food, cosmetic or medicines emulsions. A basic emulsion with vegetable oil (20% w/w), whey protein (20% w/w) and xanthan gum (0.1% w/w) was prepared using a mixer equipament. Stability tests and storage conditions, flow test, freeze drying, particles size characterization, analyses of microscopic and rheological measurements were performed. Characterization analyses showed that the formed systems can be classified as emulsions with droplet sizes smaller than 100 µm, non-Newtonian fluids characterized as pseudoplastics and practically constant viscosity at high shear rates. In addition, characterization indicates that the use of Turrax results in more stable emulsions (more homogeneous droplets and reduced diameter) and lower apparent viscosity values. The results showed that emulsions formed by the use of whey include xanthan gum exhibit stability at room temperature, during freezing/thawing and the freeze drying process, suggesting the satisfactory application of these compounds information and stabilization of emulsions that undergo processes involving these unitary operations in pharmaceutical and food industries.
O abacate é uma fruta rica em gorduras monoinsaturadas. O soro lácteo apresenta ação emulsificante e a sua combinação com outros componentes naturais pode ser potencializada formando novos produtos estáveis e atrativos ao consumidor. O presente estudo avaliou se a polpa de abacate poderá agir como agente emulsificante na fase oleosa de uma emulsão para fins alimentícios. Foi preparada uma emulsão básica com e sem a polpa de abacate. Estas emulsões foram pasteurizadas e microfluidizadas (Mixer e Turrax). Foram realizados testes de estabilidade (com e sem variações de temperaturas) e condição de armazenamento, teste de escoamento, liofilização, caracterização das amostras por tamanho de partícula e análise microscópica. Os resultados mostraram que a estabilidade da emulsão com abacate foi inferior à emulsão base. No estudo de escoamento as amostras das emulsões com abacate tiveram uma maior quantidade de massa perdida. Foi comprovada que houve um aumento da viscosidade pela ação emulsificante proveniente da polpa de abacate e ocorreu uma redução do tamanho das partículas dessa emulsão.
