A Carcinicultura é compreendida como a criação de camarões em viveiros. Entre os anos de 2016 e 2020, esta atividade aquícola apresentou expressivo crescimento, destacando um grande potencial para a produção de camarão marinho, que neste período registrou um aumento de 86,67%, fazendo com que este tenha se tornado o crustáceo ocupante do grupo dos artrópodes, que está em maior destaque com relação a economia pesqueira mundial. A indústria de processamento e beneficiamento de camarão tem sido responsável pelo desuso de peças como, cefalotórax e carapaça deste animal, na elaboração de produtos, sendo estes comumente descartados. O constante descarte indevido dos resíduos, principalmente em locais onde a produção é de pequeno porte, como em comunidades do interior, onde todo o dejeto é jogado em estuários e em lixões improvisados a céu aberto, permitem a proliferação de ratos, e insetos, assim como de moscas as residências das proximidades. Tais problemas acima citados, podem trazer doenças e contaminação aos moradores da região. Para tanto, o objetivo deste trabalho foi encontrar uma solução para que não haja este desperdício do animal, visando agregação de valor a fragmentos do crustáceo que até então são desvalorizados, desenvolvendo, desta forma, um experimento com 100% de aproveitamento e livre de conservantes, além da criação de um produto inovador, pois apesar da importância da retirada desses resíduos destes locais, a indústria de alimentos está sempre em busca de novos produtos. Para a realização destes objetivos foram realizados três produtos utilizando, desta forma, todo o animal. Os resultados mostraram excelente aceitação de todos os produtos, assim como promoveu maior rendimento e agregação de valor, comprovando que esta alternativa servirá para evitar contaminações e proliferações em comunidades e locais onde não há estrutura de descarte, sendo assim, uma fonte de renda sustentável e mais lucrativa quando comparada a convencional, tal qual é comercializado apenas a parte nobre do animal.
