RESUMO No período de maio de 2008 a abril de 2009 foi avaliada a qualidade microbiológica de 40 amostras de queijo Minas Frescal produzidas artesanalmente e inspecionadas pelo Serviço de Inspeção Estadual e Federal no Município de Santa Helena, PR, através da quantificação do número mais provável de coliformes termotolerantes, contagem de Staphylococcus spp., pesquisa de bolores e leveduras, presença/ausência de Salmonella spp. e Listeria monocytogenes. Quanto à presença de coliformes termotolerantes, apresentaram-se em desacordo com o estabelecido pela ANVISA segundo a Resolução n° 12 de 02 de janeiro de 2001, 90% das amostras artesanais e 55% das inspecionadas. Em relação à enumeração de Staphylococcus spp., 100% das amostras artesanais e 25% das amostras inspecionadas apresentaram-se em desacordo com o estabelecido pela legislação. Salmonella spp. e Listeria monocytogenes não foram isoladas em 25 g do produto, mostrando que em relação a estes agentes as amostras de queijo analisadas, tanto de produção artesanal quanto as inspecionadas, apresentaram-se dentro dos padrões estabelecidos (ausência em 25 g do produto). Os resultados revelaram que, do total de amostras analisadas, somente 15% apresentaram-se de acordo com os padrões estabelecidos pela ANVISA, estando um número elevado de amostras artesanais (100%) e inspecionadas (70%) fora dos limites estabelecidos pela legislação. Portanto, maior atenção deve ser tomada pelas autoridades sanitárias, uma vez que tais produtos podem colocar em risco a saúde do consumidor.
A fabricação de linguiça do tipo frescal requer uma série de etapas de manipulação, o que eleva as possibilidades de contaminação por diversas espécies de micro-organismos patogênicos ou deterioradores. Isso pode comprometer a qualidade microbiológica do produto final e veicular enfermidades a partir de seu consumo. No período de abril a setembro de 2009, foi avaliada a qualidade microbiológica de 40 amostras de linguiça tipo frescal produzidas artesanalmente e inspecionadas pelo Serviço de Inspeção Estadual e Federal nos municípios de Cascavel e Toledo (PR), através da quantificação de coliformes termotolerantes, contagem de Staphylococcus spp., bactérias mesófilas aeróbias estritas e facultativas viáveis, pesquisa de Salmonella spp., Campylobacter spp., Bacillus cereus, Clostridium sulfito-redutores e bolores e leveduras. Os resultados revelaram que 55% das amostras analisadas de linguiça tipo frescal inspecionadas e artesanais apresentaram-se fora dos parâmetros estabelecidos pela Resolução RDC nº 12, de 2 de janeiro de 2001, da Agência Nacional de Vigilância Sanitária (Anvisa), em pelo menos um dos grupos de micro-organismos estudados. Portanto, pode-se dizer que a linguiça tipo frescal comercializada no oeste do Paraná pode oferecer riscos à saúde da população.
ABSTRACT:In this article it was evaluated the quality of water in the Cascavel river, in the city of Cascavel -Paraná using microbiological indicators, physical and chemical pollution and susceptibility / resistance in strains of Escherichia coli isolated antimicrobial trade. The water sampling was conducted between 2010-July and 2011-June at three points: a) near the source, b) urban area, c) rural area. The samples were analyzed for physical, chemical and microbiological variables: temperature, pH, color, turbidity, electrical conductivity, total nitrogen and total phosphorus, total coliforms (CT), fecal coliform (CTe) and Escherichia coli. Tests were also performed to nine antimicrobial commercial resistances. The variables studied indicated that the Cascavel river water was presented at disagreement with the resolution 357/2005 CONAMA (class I), ranking in the index as regular water quality. The physical, chemical and rainfall did not affect the growth of CT and CTe, with higher counts of E. coli in the urban area. The greatest resistance profiles of the strains of E. coli isolated from Cascavel river water was found in section 2, the urban area as a probable consequence of human influence on water quality.
