RESUMO:A agricultura orgânica constitui a atividade agrícola de maior crescimento no mundo. Os benefícios ao meio ambiente, a privação do agricultor do contato contínuo com agentes químicos e a redução de componentes nocivos à saúde do consumidor fazem deste tipo de agricultura uma tendência mundial na comercialização de alimentos. O presente trabalho teve como objetivo realizar uma pesquisa de mercado no Estado do Paraná, para avaliar como o público consumidor se comporta em relação ao produto polpa de fruta orgânica. Para tanto, utilizou-se um questionário e como resultado notou-se que a polpa de fruta é consumida principalmente em bares, restaurantes e lanchonetes e que o suco é a forma mais difundida de comercialização. Não se pode concluir, com base nos critérios apresentados, que a característica que o consumidor mais assimila a um produto orgânico já que os índices resultantes ficaram muito próximos uns dos outros. Dentre os resultados, destaca-se que a saudabilidade é o critério de escolha na compra da polpa congelada de frutas orgânicas (40% em relação às demais características) e o sabor que mais agrada é o morango (42%). Aproximadamente 67% dos consumidores estariam dispostos a pagar por uma embalagem de 100g de polpa congelada de frutas orgânicas um valor inferior a três reais, mostrando assim, o desafio do setor de orgânicos em fornecer produtos a preços acessíveis à população.
