A cidade de Paraty (RJ) foi fundada no século XVII e seu centro histórico possui um conjunto edifícios históricos preservados, tombados pelo IPHAN e reconhecidos pela UNESCO como Patrimônio da Humanidade. Paraty fez parte de importantes ciclos econômicos do Brasil, como o Ciclo do Ouro, do Café, a Economia da cana-de-açúcar e a Economia Escravista. Apesar de ter seu centro histórico preservado, a maioria dos antigos engenhos de cana-de-açúcar e seus alambiques, edificados ao longo dos séculos XVIII e XIX, está em ruínas. O objetivo deste artigo é identificar a relevância destes antigos engenhos e alambiques no contexto histórico do município. Sua relação com o centro histórico, identificando os elementos que constituem atualmente a Paisagem Cultural da cidade, atribuindo seus valores. O método compreende 4 tapas: 1) análise de documentos para compreender a atuação da economia da cana-de-açúcar na cidade; 2) análise dos elementos da paisagem do centro histórico e dos antigos engenhos, 3) análise dos valores cognitivo, histórico, artístico e científico dos engenhos de cana-de-açúcar e seus alambiques, 4) Análise dos valores agrários e industriais dos antigos engenhos e seus alambiques. Os resultados demonstram que a economia de cana-de açúcar esteve fortemente presente na história da vila; que a paisagem cultural de Paraty é composta pelos elementos fixos, semifixos e não fixos do centro histórico e dos engenhos e seus alambiques; que estes possuem valores cognitivos, artísticos, históricos e científicos e o caráter agrário e industrial que os engenhos desempenhavam, indicam o reconhecimento destes como Patrimônio Agroindustrial da cidade.
