Os aditivos alimentares são parte integrante da indústria de alimentos contemporânea, todavia, há séculos o homem se preocupa com a preservação dos alimentos, visto que várias substâncias químicas eram adicionadas aos alimentos para desempenhar determinadas funções. A maionese é um produto que apresenta um alto nível de aceitação para ser consumido por toda a população, porém é bastante susceptível a deterioração devido à auto-oxidação das gorduras insaturadas e poli-insaturados no óleo e a sua estabilidade depende do tipo de óleo usado. Com o intuito de garantir a qualidade microbiológica e a estabilidade da maionese, a indústria de alimentos faz uso de barreiras adicionais com o uso de aditivos. Os conservantes são aditivos que retardam ou impedem a alteração dos alimentos causadas por microrganismos ou enzimas. Assim, o presente trabalho teve como finalidade realizar uma pesquisa com diferentes categorias de maionese analisando os respectivos conservantes que nelas contém. Foram selecionados um total de 20 marcas. Conclui-se que para as marcas estudadas os mais utilizados nas formulações foram o Sorbato de Potássio e o Ácido Sórbico.
