Tilapia comprises one of the most cultivated fish species worldwide, mainly commercialized in the form of fillets. As a result, the amount of waste generated by processing is high, with tilapia skin being commonly discarded and not used as food for human consumption. In this context, the aim of this study was to dry residual filleted tilapia skins in a solar dehydrator and perform physical-chemical analyses after drying in order to evaluate the potential for the development of byproducts. The skins were collected at a fish market on Mercado do Peixe in Teresina - PI. Treatments consisted of four sodium chloride concentrations (0.0%; 25.0%; 50.0% and 100.0%), with five replications, totaling 25 samples. The skins were dried in the solar dehydrator for 24 hours, followed by moisture, ash, protein, lipids, pH and water activity analyses. Moisture in the in naturaskins was 57.7%, differing significantly from the dehydrated tilapia skins, which ranged from 9.4% to 10.6%. The ash in the in natura skins was 0.17%, while dehydrated tilapia skins displayed variations from 1.19% to 4.17%. The crude protein found of the in natura skins was 41.4%, significantly different (P <0.05) from the skins submitted to the solar dehydration method. Based on these findings, the use of solar dehydrator for short periods is confirmed to favor the uniform dehydration of residual tilapia skin from filleting, generating a product with satisfactory bromatological patterns for the development of fish-based by-products.
Objetivou-se elaborar um doce com diferentes concentrações de massa do pedúnculo do caju e soro de leite, e verificar sua microbiologia por seis meses e a sua aceitabilidade sensorial. Foram desenvolvidas quatro formulações com diferentes percentuais de massa e soro de leite. Realizou-se teste de análise de variância, one-way ANOVA, post hoc test Tukey e transferiu-se os dados para o programa estatístico Graph Pad Prism 5.01 e SPSS 19.0 para análise de regressão. Foram realizadas análises microbiológicas durante 180 dias de armazenamento e análise sensorial. Não foi verificado contagem significativa dos micro-organismos pesquisados. Constatou-se boa aceitabilidade das formulações F1 (0%) e F2 (10%) com índices superiores à 70% para todos os atributos investigados, e intenção de compra de 74,00% e 79,40%, respectivamente. Os atributos obtiveram escores entre 6,14 e 7,34, sendo a menor atribuída à textura da formulação com 30%, e a maior, para a aceitação global da formulação com 10% de massa do pedúnculo do caju. Na análise de regressão linear não foi observada significância estatística para todos os parâmetros. Não houve ocorrência significativa dos microrganismos pesquisados. O doce apresenta maiores porcentagens e índices de aceitabilidade nas formulações com 0% e 10% da massa do pedúnculo do caju.

Para conhecer o potencial de utilização de ingredientes não convencionais para formulação de produtos alimentícios, esta pesquisa objetivou elaborar barras alimentícias utilizando coprodutos e subprodutos da cadeia agroindustrial e avaliar suas características nutricionais, sensoriais e intenção de compra. Foram desenvolvidas quatro formulações, sendo uma barra alimentícia padrão (F0) tendo como ingrediente base uma pasta preparada com o coproduto do pedúnculo de caju e soro de leite, sem acréscimo de gergelim e três modificações dessa formulação (F1, F2, F3) com adição de 5%, 10% e 15% de gergelim, respectivamente. A aceitação global das formulações foi avaliada por meio de escala hedônica estruturada de 9 pontos e intenção de compra verificada através de teste de preferência com escala 1 a 5 pontos. Os resultados dos testes sensoriais mostraram que a média de aceitação do produto foi de 6,24, sendo que a barra F3 obteve melhores notas nos testes de intenção de compra. Para os testes de cor e firmeza, a formulação F3 apresentou maior ΔE, indicando uma coloração mais clara em comparação às demais formulações. Na avaliação para força de corte, a formulação F0 apresentou os maiores resultados, caracterizando-se como produtos mais firmes. O estudo demonstrou que barras alimentícias podem ser produzidas a partir do aproveitamento de coprodutos e subprodutos da cadeia agroindustrial com características nutricionais e sensoriais satisfatórias.
