Desenvolver pães com reduzido teor de sódio, substituindo parcialmente cloreto de sódio por cloreto de potássio, visando elaborar um produto capaz de contribuir com a adoção de hábitos alimentares saudáveis, auxiliando no combate às doenças crônicas não transmissíveis, como a hipertensão arterial, foi o propósito deste trabalho. Foram realizadas três formulações: Formulação 1, com a utilização de sal com teor habitual de sódio, Formulação 2, com sal light 50% menos sódio e Formulação 3, 70% menos sódio. Os pães foram submetidos ao teste de aceitação com 46 consumidores, utilizando-se escala hedônica para avaliação dos atributos sensoriais e da intenção de compra. Na análise sensorial, verificou-se que as substituições do sal não causaram diferenças significativas na cor, textura e aparência dos pães, tendo influenciado apenas no sabor e, este, na aceitação global e intenção de compra. A formulação (F2) mostrou-se aceitável ao gosto dos provadores, não diferindo da (F1) quanto aos atributos avaliados. Já a (F3), diferiu da (F1) quanto ao sabor, à aceitação global e, consequentemente, à intenção de compra. Comparando (F2) e (F3), apenas diferiram na intenção de compra. Assim, observou-se que é viável desenvolver um pão com redução no teor de sódio sem alterar significativamente suas características sensoriais.
