Effects of acid modification on the physicochemical, rheological, microstructural and expansion on cassava starch with lactic, acetic and citric acids in proportions of 5 %, 10 % and 15 % were investigated. This effect was verified on swelling power and solubility index, rheology, pH, scanning electron microscopy, thermal analysis and baking test. The results were available by ANOVA and Tukey test. The study indicates that the acid treatment influenced significantly the physicochemical properties. The lactic and acetic acids did not modify the rheological model of the cassava starch, but showed a reduction in the apparent viscosity. The acetic and lactic acids had a strong influence on the starch granules. Thus, the acid modification of cassava starch promotes the significant changes in starch properties.
Background: The ora-pro-nóbis (Pereskia aculeata Mill.) is a plant from Brazilian biodiversity used for food and medicinal purposes. It has ample technological potential, however, it is still underutilized, being classified as a Non-Conventional Food Plant (PANC). Prospective studies in intellectual property banks make it possible to expand perspectives for scientific research, enhancing the generation of new products. Objective: Evaluate the patents of products containing Pereskia aculeata Mill. for the areas of food and health in intellectual property databases. Methods: The study was conducted through structured prospective investigation (collection, processing and analysis) in 4 patent databases: National Institute of Intellectual Property (INPI) - Brazil, United States Patent and Trademark Office, World Trade Organization Intellectual Property (WIPO) and Espacenet. Results: The evaluation showed a reduced number of registered patents. In general, 8 patent applications were examined, of which 7 are directly associated with the species (and its derivatives) and 1 is related to a device specially designed for harvesting leaves/fruits and removing thorns. The focus of the patents was the use of the species in the food, pharmaceutical and biotechnological areas, with emphasis on the use of the leaves in the extraction of mucilage and proteins. Conclusion: This study showed that Pereskia aculeata Mill. is a technologically promising plant, because of its nutritional and medicinal composition, and it is important to encourage innovation and the development of new products with the species.
A linhaça (Linum usitatissimum L.) possui ácidos graxos poli-insaturados, fibras, compostos fenólicos, antioxidantes e outros bioativos, que lhe confere status de alimento funcional. Este estudo objetivou verificar a composição físico-química e a quantidade de compostos fenólicos na farinha de linhaça, além da composição em ácidos graxos do óleo proveniente dessa farinha e a sua estabilidade oxidativa. A farinha de linhaça foi caracterizada quanto à umidade, cinzas, proteínas, lipídeos, carboidratos, valor calórico e compostos fenólicos. Dessa farinha extraiu-se o óleo, que foi analisado em cromatógrafo para a determinação de seus ácidos graxos. A farinha de linhaça apresentou 4,85% de umidade, 3,28% cinzas, 17,56 proteína, 41,31% lipídios, 33,0% carboidratos, 574,03 de valor calórico e 211,53 mg EAG/100g de compostos fenólicos. O cromatograma do óleo de linhaça mostrou predominância de ácidos graxos insaturados (95,1%), sendo o de maior concentração o ácido linolênico (C18:3 – 53,58%), seguido do oleico (C18:1 – 25,98%), linoleico (C18:2 – 15,54%). O período de indução (PI) do óleo de linhaça reduziu com o aumento da temperatura, mostrando que temperaturas mais elevadas (110 °C e 120 °C) promoveram menor estabilidade oxidativa. Sugere-se observar a conservação da farinha e óleo de linhaça e dos produtos que os contenham em sua composição. E avaliar o teor dos ácidos graxos poli-insaturados (PUFA) nos produtos adicionados de farinha e óleo de linhaça, especialmente aqueles submetidos a temperaturas acima de 120 °C, como nos produtos da panificação.
Este trabalho objetivou elaborar pães tipo forma com farinha de trigo, farinha de linhaça e enzimas transglutaminase e xilanase. Foram realizados testes preliminares por meio de um delineamento inteiramente casualizado, substituindo-se parcialmente a farinha de trigo da formulação padrão dos pães por diferentes porcentagens de farinha de linhaça. A partir de um delineamento composto central rotacional adicionou-se enzimas transglutaminase e xilanase à uma formulação contendo linhaça. Ao final, obtiveram-se três formulações, formulação padrão com 100 % de farinha, formulação com 90 % de farinha de trigo, 10 % de farinha de linhaça, sem adição de enzimas e formulação com 90% de farinha de trigo, 10% de farinha de linhaça, com as enzimas transglutaminase e xilanase. Os pães provenientes dessas formulações foram analisados quanto às suas características instrumentais e sensoriais. O uso das enzimas transglutaminase e xilanase em quantidades iguais a 6,0 mg e 7,5 mg, respectivamente, provocou melhorias nos parâmetros tecnológicos dos pães, quanto à textura do miolo. Esses pães obtiveram aceitação sensorial favorável, com médias acima de 7, para os atributos de cor, aroma, sabor, textura e avaliação global. Incentiva-se o uso da farinha de linhaça marrom na formulação de pães tipo forma, como forma de melhorar sua qualidade nutricional. Em associação, as enzimas transglutaminase e xilanase, aplicadas em quantidades viáveis, podem atuar como coadjuvantes na panificação, elevando a qualidade tecnológica do produto.
