ARTICLEConsacrée au secteur oléicole espagnol, notre analyse porte sur les producteurs d'olives destinées aux huileries et sur les producteurs d'huile d'olive vierge. Ces deux collectifs, que nous appellerons « oléiculteurs » et « oléifacteurs » dans cet article, entretiennent des relations étroites non seulement parce qu'ils ont besoin les uns des autres mais également en raison de l'importance particulière du réseau des coopératives oléicoles en Espagne, ce qui explique que la plupart des oléiculteurs sont également des oléifacteurs.Le secteur est donc constitué de différents agents et entreprises et de tous ceux avec lesquels ceux-ci entretiennent des relations : fournisseurs d'inputs ou de services (équipements agricoles, industriels, entreprises de fertilisants, laboratoires d'analyse, etc.), agriculteurs (oléiculteurs), huileries (associatives, industrielles et privées), raffineries, unités d'extraction des grignons d'olive, courtiers, nouveaux intermédiaires « électroniques », conditionneurs (intégrés ou non aux huileries), distributeurs, industries de conserveries ou entreprises élaborant leurs produits avec des huiles d'olive, entreprises co-génératrices d'énergie, industries d'élaboration de produits cosmétiques, etc.Comme nous pouvons le constater, le secteur des huiles d'olive est une réalité complexe, que nous avons partiellement schématisée dans la ( figure 1 ).Nous analyserons ci-après la situation actuelle et l'avenir du secteur oléicole espagnol en nous basant la méthode dite SWOT (de l'anglais strengths/weaknesses/opportunities/threats) qui nous permettra d'analyser les points forts, les points faibles, les opportunités et les menaces qui caractérisent le secteur oléicole.Après cette analyse, nous ferons référence aux axes stratégiques autour desquels il convient, à notre avis, de développer et de moderniser le secteur. Enfin, nous apporterons les conclusions qui nous semblent les plus intéressantes pour synthétiser le contenu de ce travail, puis nous formulerons quelques réflexions à titre de conclusion. Just like any other businesspeople, farmers have to take decisions every day that are crucial for the survival of their farms. They often wonder "Is the structure of my farm competitive and sustainable in time? Should I expand its size or modify the management? And if so, by how much? However, in many cases they do not have the necessary information to take good decisions. In this paper, we develop a methodology to estimate the production costs of farms as a means of assessing the impact of several structural inefficiencies. In this way, we show how changes in farm management can reduce costs, so increasing farm sustainability. Results show that significant economies of scale can be achieved in production, and that downtimes, farm fragmentation and dispersion have a substantial effect on production costs and profit margins. Furthermore, through cooperative forms of production and management, traditional farms can become more sustainable, while at the same time fostering rural and territorial development.
Purpose – The purpose of this paper is to analyze the labeling and denominations of olive oils and to examine to what extent these factors confuse consumers. Specifically, the authors analyze the extent to which the different denominations of olive oil prevent consumers from distinguishing among the types of olive oil. Furthermore, the authors analyze whether the current generic names of olive oil affect consumer perceptions regarding the product’s various qualities and characteristics. Design/methodology/approach – The authors performed an experiment with 128 participants divided into two groups (experimental n=64 and control n=64). In the pretest, participants completed a survey with 12 terms related to olive oil. The experimental group was then trained in the meaning of each term, after which the group returned to complete the same survey. Findings – The authors can confirm H1 and H2. Results show that there is no clear knowledge regarding some of these terms. Social implications – This study provides positive implications to both consumers, providing them a clear information, and producers and marketers, helping distinguish in the market olive oils of more quality. Originality/value – This paper is pioneer in the literature. The authors provide a number of proposals and amendments regarding olive oil names to improve the knowledge and clarity of olive oil with direct implications for agricultural policy.
