La capacidad de retención de agua (CRA) es uno de los parámetros de calidad de la carne más importante, dado que posee asociación con la percepción de jugosidad y la pérdida de peso de la pieza cárnica durante procedimientos como la maduración, la cocción y otro tipo de procesamiento tecnológico. La CRA en crudo y cocinado (CRAr y CRAc respectivamente) fue evaluada en 164 machos castrados cruzados, en los cuales se realizó la genotipificación de 23 regiones genómicas de los genes CAPN1, CAST, DES, PRKAG3 y RYR1. El marcador CAST2959 presentó asociación con el parámetro CRAr en el músculo Longissimus dorsi (LD) siendo el genotipo AA el de mejor comportamiento. El marcador RYR1-11195 se encontró asociado con el parámetro CRAc en LD, siendo la carne de animales con los genotipos GG y GA, la de mayor pérdida de peso, si son comparados con carne proveniente de animales con genotipo AA. Lo anterior permite establecer estos marcadores como posibles polimorfismos de importancia en procesos de selección y mejoramiento animal de este parámetro de calidad cárnica (CRAr y CRAc) en bovinos, posterior a un proceso de validación.
El estudio tuvo como objetivo caracterizar genéticamente la población de Ovinos Criollos de Pelo Colombiano (OCPC) de dos zonas geográficas del país, el Piedemonte Llanero (PDML) y los Valles Interandinos del Río Magdalena (VIRM). Se tomaron muestras de músculo para la extracción de ADN mediante la metodología fenol cloroformo isoamílico. El genotipado se hizo con el OvineSNP50 BeadChip Data Sheet. Los genotipos fueron analizados con el software PLINK v.1.9 en busca de relaciones de consanguinidad y parentesco. Los análisis estadísticos de los datos se realizaron con el uso de los paquetes “genepop” y “adegenet” del software R. Los resultados mostraron una heterocigosidad esperada de 0.374 para el OCPC, mientras que fue de 0.357 para la zona de PDML y de 0.396 para la zona de VIRM. Los valores para los parámetros del coeficiente de consanguinidad (Fis y Fit) fueron positivos para la población y las subpoblaciones, demostrando la existencia de consanguinidad. El valor para el Fst fue de 0.042 entre subpoblaciones definidas como zonas geográficas (p<0.001), lo que sugiere que la población analizada corresponda a dos grupos raciales. Esto es apoyado con el análisis de componentes principales donde se evidencia una tendencia de aislamiento entre los individuos para cada zona geográfica. En conclusión, se puede afirmar que, la diversidad genética de la población de Ovino Criollo de Pelo Colombiano, comparada con otras razas ovinas a nivel mundial, es elevada.

Los músculos Longissimus dorsi (LD) y Semitendinosus (ST) de 164 machos castrados provenientes del cruce de machos de las razas Simmental, Normanda, Blanco Orejinegro, Braunvieh, Guzerat, Brahman Blanco, Brahman Rojo, Limousin y Romosinuano con hembras Brahman blanco. Para el parámetro CRAr en LD se presentó significancia de los factores tipo genético y maduración y en ST del factor maduración. Para el parámetro de CRAc en LD fue significativo el factor tipo genético y para ST ninguno de los dos factores fue significativo. No existieron interacciones significativas de los dos factores evaluados. Lo ideal es someter a tiempos cortos de maduración ambos músculos y tener en cuenta el tipo genético al cual pertenece el individuo con el fin de minimizar las pérdidas de exudado. SUMMARYWater Holding Capacity (WHC) was established in raw meat (WHCr) through the press method and in cooked meat by cooking losses (WHCc). The beef was aged at 7, 14 and 21 days post mortem. These animals were F1 offsprings of Simmental, Normande, BON (Blanco Orejinegro), Braunvieh, Guzerat, White Brahman, Red Brahman, Limousin and Romosinuano bulls crossed with White Brahman females. <p>El continente americano fue colonizado en el siglo XVI por los europeos quienes introdujeron por primera vez el ganado bovino de origen <em>Bos taurus</em>. La introducción de ganado <em>Bos indicus </em>ocurrió muchos años después, con las primeras importaciones desde la India, las cuales incluyeron principalmente machos. Con el fin de estudiar la participación de hembras <em>Bos taurus </em>en el origen del ganado Cebú colombiano, se secuenció un fragmento del ADN mitocondrial de 374 pb (<em>D-Loop</em>) en seis animales de la raza Cebú Brahman colombiano y 20 individuos representativos de las cinco razas criollas colombianas: seis de Blanco Orejinegro (BON), cinco de Costeño con Cuernos (CCC), tres de Romosinuano (ROMO), cuatro de Casanareño (CAS) y dos de San Martinero (SM). Adicionalmente, para el mismo fragmento se secuenciaron dos individuos de la raza española Pirenaica, como referente <em>Bos taurus</em>. La comparación de las secuencias reveló que los animales de la raza Cebú Brahman colombiano analizados presentaron ADN mitocondrial de origen taurino con mayor cercanía respecto de las razas criollas de origen <em>Bos taurus </em>europeo que con relación a las secuencias consenso <em>Bos indicus</em>, frente a las que se hallaron mayores divergencias. Adicionalmente, las divergencias de las razas criollas colombianas con respecto al consenso <em>Bos taurus </em>europeo variaron entre 0,005 y 0,014, resultado que sugiere la participación de matrilineajes <em>Bos taurus </em>en el origen del Cebú Brahman colombiano.</p><p> </p><p><strong>Identification of mitochondrial DNA of Bos taurus origin in Colombian Zebu Brahman cattle </strong></p><p>The American continent was colonised in the XVI century by the Europeans who introduced the Bos taurus cattle. The introduction of Bos indicus cattle was done a few years later with cattle from India, mainly males. In order to study the participation of Bos Taurus females in the origin of the Colombian Zebu cattle, a 374 bp mitochondrial DNA fragment was sequenced (D-Loop) in six animals belonging to Colombian Zebu Brahman breed and 20 individuals representative of he five Colombian native breeds: 6 of Blanco Orejinegro (BON), five of Costeño Con Cuernos (CCC), three of Romosinuano (ROMO), four of Casanareño (CAS) and two of San Martinero (SM).
