Soluble proteins and Ca and P salts in the fouling deposit on a mineral microfiltration membrane obtained in static conditions were analysed and compared with those found using dynamic filter conditions in a laboratory pilot installation for milk processing. The serum milk proteins were retained by the porous micellar deposit under both static and dynamic conditions, resulting in progressive fouling of the dynamic micellar membrane, enabling milk to be processed with a mineral microfiltration membrane. Ca and P salts increased fouling probably by allowing better adsorption of casein micelles on the alumina and by acting as intermicellar bonds in the deposit. Fat globules modified porosity, permeability and resistance to matter transfer of the deposit. SummaryThe fouling of an inorganic microfiltration membrane with an average pore diameter of 0·2 μm obtained in static conditions with milk, acidified milk and acid coagulum was examined using scanning electron microscopy. The structure and porosity of external fouling related to the pH of the milk accounts for the performance and efficiency obtained in microfiltration. Electrophoretic analysis of permeate, characterized by lack of casein, shows that the deposit plays a fundamental role in mass transfer through filter layers. Variations in the physicochemical properties of casein as a function of pH at 50 °C were used to account for the development of the structure of fouling, which comprised three main states: (i) dense deposit of juxtaposed micelles, (ii) loose network formed by chains made up of bonded protein aggregate, (iii) irregular protein aggregate leading to high-porosity deposits. The presence of a protein film strongly adsorbed on the membrane layer of alumina particles is demonstrated.

RésuméL'application de l'ultrafiltration sur membrane minérale à la clarification et la stérilisation des vins est envisagée. L'étude des caractéristiques membranaires, des paramètres hydrodynamiques et de la durée d'ultrafiltration permet de dégager des conditions optimales de travail. \ L'étude du diamètre moyen des pores de la membrane montre que le diamètre de 0,2~m est suffisant pour que le filtrat recueilli soit biologiquement stable et conforme aux normes en vigueur (moins de la germes par litre), et que le débit d'ultrafiltrat est peu affecté par la taille des pores.Une vitesse tangentielle élevée améliore nettement les débits de perméation sans nuire à la qualité du produit final.De même, au moins pour les faibles valeurs, la pression facilite les transferts de matières à travers le filtre sans entraîner de relargage de solutés au cours du temps.La température favorise également la filtration, mais provoque une détérioration des qualités organoleptiques du vin.
RésuméCette étude n'est qu'une étape dans la compréhension des phénomènes de polarisation de concentration et de colmatage lors de la micro-ou de l'ultrafiltration du lait sur membrane minérale. Elle consiste en la mise au point d'une méthode couplant la microscopie électronique à balayage et l'analyse biochimique des colmatages obtenus au repos (sans l'influence des facteurs vitesse et pression). Elle a permis de mettre en évidence l'existence d'un colmatage différencié dans lequel on a pu distinguer :-une adsorption initiale des constituants non micellaires sur les grains d'alumine membranaire ; -un colmatage peu profond à l'intérieur de la membrane; -un dépôt en surface quantitativement important (60 à 80 % du colmatage total) caractérisé par une structure poreuse constituée par l'agglomération des micelles de caséines et contenant des globules gras dans le cas d'un lait entier.Nous avons confirmé sa nature essentiellement protéique avec présence de tous les constituants d'origine du lait et la participation importante des sels phosphocalciques. La présence de la matière grasse semble jouer un rôle important puisque l'on a constaté une évolution différente au cours du temps de contact suivant que le lait est entier (augmentation du dépôt) ou écrémé (diminution du dépôt).Mots clés: Microfiltration -Ultrafiltration -Membranes -Colmatage -Lait -Microscopie électronique à balayage.
