Atualmente, é crescente o número de refeições consumidas fora de casa, e dentre os vários tipos de serviços de alimentação, existe os terceirizados, onde ocorrem a entrega de refeições transportadas. O objetivo deste estudo foi verificar a adequação das temperaturas na chegada das refeições, durante a distribuição das preparações, e do binômio tempo e temperatura em serviço de alimentação transportada na cidade de Fortaleza (CE). A pesquisa foi aplicada em três refeitórios de uma Unidade de Alimentação e Nutrição contratante de serviço de alimentação transportada. A coleta de dados foi realizada durante o mês de julho de 2015, e foram aferidas as temperaturas em três momentos: na chegada da refeição e duas vezes durante a distribuição. Verificou-se que uma das unidades apresentou maior média de inadequação, principalmente no horário de 13h, e que as preparações salada crua e guarnição apresentaram 100% de inadequação em todas as aferições de temperaturas e unidades. A correção dessas inadequações e os ajustes nos equipamentos de exposição das preparações devem ser exigidos pela contratante, pois temperaturas inadequadas favorecem a multiplicação de microrganismos e possibilitam a ocorrência de doenças transmitidas por alimentos.
