The sensory quality of coffee begins in the plant tree, where the characteristics of the fruits define the composition of the chemical precursors, which can be preserved or transformed in stages such as mucilage fermentation, and are the basis for the beverage attributes. This study evaluated three degrees of maturity and their comportment in fermentation under two temperatures and two-time extensions, establishing their sensory and chemical characteristics through analytical techniques such as liquid and gas chromatography. The effect of the prolongation time was evidenced for oxalic, quinic, citric acids, glucose, and fructose in two of the three degrees of maturity evaluated. The interaction of the process conditions increased the content of fructose and glucose in one of the states, being more evident at 20 °C. The treatments associated with the most advanced stage of maturity and with higher temperature decreased the scores of five sensory attributes and the fructose content increased by 48.50% and the glucose content increased by 47.31%. Advanced stages of maturity preserve quality standards, but their performance can be differential in postharvest processes, especially in those that are beyond the standards, such as those involving prolongations in different processes such as fermentation.
La fracción lipídica del grano de café, así como los compuestos que la componen, cumplen una función importante en la calidad sensorial del café. Esta investigación tuvo como objetivo caracterizar químicamente, la fracción lipídica del café verde en las variedades Tabi, Cenicafé 1 y Castillo® Naranjal, Castillo® El Tambo y Castillo® Pueblo Bello, procedentes de lotes cultivados en diferentes localidades de Colombia durante dos años de cosecha. Se determinaron los contenidos de lípidos totales, la composición de ácidos grasos (palmítico, esteárico, oleico, linoleico, araquídico) y los isómeros ?-, ?-, ?-, y ?- Tocoferol. Las muestras se evaluaron sensorialmente, de acuerdo con el método empleado por Almacafé, según la norma NTC 4883. El contenido promedio de lípidos totales varió entre 10,7-12,3% en base seca (b.s), presentando diferencias significativas para la variedad Tabi con respecto a las demás variedades. Los contenidos promedios de tocoferoles (vitamina E) estuvieron en el rango entre 40,6-60,2 mg de vitamina E/100 g aceite de café, se destaca el isómero ?-Tocoferol por contenidos superiores a los reportados. En cuanto a la composición de ácidos grasos, se identificaron como ácidos mayoritarios al ácido palmítico con un contenido entre 38,7-40,5%, seguido por el ácido linoleico con un contenido promedio entre 34,1%-37,9%. Respecto a la evaluación sensorial, el atributo impresión global clasificó en promedio la calidad en taza de las variedades como muestras estándar, con valores de rangos de calificación inferiores a 4,5 debido posiblemente a un proceso de poscosecha deficiente, el cual tiene incidencia en la calidad de la bebida.
La técnica de espectroscopia de infrarrojo cercano-NIRS se ha consolidado como una técnica analítica secundaria confiable, objetiva, reproducible, verificable, económica y de bajo impacto ambiental. Esta investigación tuvo como objetivo realizar la validación de la ecuación desarrollada a partir de la técnica NIRS para café verde almendra, que predice actualmente 13 compuestos químicos (cafeína, trigonelina, ácidos clorogénicos totales, lípidos totales, ácidos grasos (palmítico, esteárico, oleico, linoleico, linolénico y araquídico), isómeros (3-CQA, 4-CQA y 5-CQA) y sacarosa. La validación se realizó con 70 muestras de café verde arábigo (Coffea arabica L.), variedades Castillo®, Cenicafé 1 y Tabi, producidas en los departamentos de Cauca, Cesar y Caldas, analizadas para la determinación de los compuestos químicos por métodos analíticos internacionales de la AOAC y estandarizados en Cenicafé; simultáneamente las muestras fueron analizadas en el equipo NIRS. A partir de los análisis estadísticos descriptivos, análisis de concordancia de Blan Altman y de correlación de Pearson entre el sesgo y magnitud, pudo establecerse la concordancia entre los métodos analíticos internacionales y el NIRS. El error relativo obtenido por la técnica NIRS para los compuestos cafeína, sacarosa, ácidos clorogénicos totales, isómeros de ácidos clorogénicos 4-CQA y 5-CQA, lípidos totales, ácidos grasos araquídico, esteárico y palmítico fue inferior al 6,0%. Los compuestos trigonelina y el ácido linoleico presentaron un error del 7,0% y el ácido oleico del 10,0%. Los resultados que soportan la investigación confirman que, con la calibración de la curva, la técnica NIRS puede constituirse como un método analítico secundario.
En el proceso de tostación, el café es sometido a diferentes temperaturas y tiempos donde se producen diversos cambios químicos fundamentales en la constitución de los componentes responsables del aroma y el sabor característico del café. En esta investigación se evaluó el efecto de la interacción temperatura y tiempo de tueste en la calidad de seis variedades de Coffea arabica mejoradas. Se generaron cinco curvas de tueste, la curva base tuvo una temperatura inicial de 200°C, dos curvas con incrementos de temperatura a 215 y 230°C, y dos curvas con disminución de la temperatura a 185 y 170°C. Los tiempos finales de tueste se encontraron entre 8 y 12 minutos, definidos por el color del grano tostado 55-65 en la escala AGTRON/SCA. Empleando técnicas analíticas como la espectrofotometría de ultravioleta visible UV-VIS, cromatografía líquida de alta resolución – HPLC y cromatografía de gases CG, se determinó la composición química del café: lípidos, ácidos grasos, ácidos carboxílicos alifáticos, alcaloides, ácidos clorogénicos totales y azúcares. La interacción del tiempo de tueste y la variedad tuvo efecto en los lípidos, los ácidos acético, quínico, málico y cítrico, para los ácidos grasos oleico, palmítico y para la cafeína y trigonelina. Los ácidos clorogénicos totales no mostraron efecto de los tratamientos y se obtuvieron valores promedio entre 1,54% a 1,69%.
