This study presents the biochemical contents of Artemia biomass produced in a pond in ‘Las Salinas de Hidalgo’, State of San Luis Potosí, Mexico. The culture was realized over a period of 1 year in an 80 × 50 × 0.65 m (200 m3) pond. The feed consisted of a mixture of four micro algae. Samples of 1 kg of Artemia biomass (wet basis) were taken monthly and total protein, total lipid, amino acids and fatty acids were assessed. The contents of total protein and lipids showed a similar tendency from July to December (maintained values of about 300 mg g−1 for protein and 90 mg g−1 for lipids). With the exception of methionine and arginine, other seven indispensable amino acids were detected in the monthly samples, having similar values during the period from July to December. The most common fatty acids determined were the C16, C18, C18:1 and C18:3n6. Both, C20:4n6 and C20:5n3, were observed occasionally, but in high quantities. The use of the four micro algae as food for the Artemia cultured extensively, improved the biochemical composition and allows using this crustacean as feed for several species of aquatic organisms used for ornamental or human consumption.
En esta revisión se hace una retrospectiva de las actividades de investigación realizadas en nutrición porcina por los investigadores del INIFAP en los 35 años de existencia del Instituto. El producto principal de esta actividad, ha sido el sentar las bases para una mejor alimentación del hato reproductor y del cerdo para abasto, enfocándola a resolver los problemas particulares de la porcicultura mexicana, con respecto al uso de las materias primas utilizadas en la alimentación del cerdo; así como la evaluación y mejora de la calidad de la canal, el enriquecimiento de la carne con metabolitos que incrementan su vida de anaquel y mejoran sus propiedades organolépticas. Asimismo, se hace una reflexión sobre los retos que enfrentará la nutrición porcina en el presente siglo, proponiendo las áreas que se tendrán que investigar para garantizar la sustentabilidad del sector, así como las acciones que los investigadores del programa y el INIFAP tendrán que realizar para responder adecuadamente a los desafíos a los que se enfrenta la porcicultura mexicana.

Postharvest diseases in fruits cause serious losses of fresh produce worldwide.The application of synthetic fungicides for the control of postharvest diseases such as anthracnose in mangoes can cause adverse effects on the environment and on human and animal health and has generated phytopathogen resistance. Biological control with the application of marine yeasts and chlorine dioxide (ClO 2 ) to reduce the use of synthetic fungicides can be an alternative to prevent anthracnose in Ataulfo mango fruits. The results showed that different doses of ClO 2 inhibited the mycelium growth and spore germination of Colletotrichum gloeosporioides in vitro. When ClO 2 and the marine yeasts Debaryomyces hansenii and Rhodotorula minuta were applied to mango fruits, no signs of anthracnose disease incidence and lesion diameter were observed (LSD, p<0.05). Therefore, the application of ClO 2 plus antagonist yeasts provides excellent control of anthracnose disease in Ataulfo mango fruits.
Se evaluaron dos fuentes de Cu, Se y Zn en combinación con vitamina E sobre la calidad y estabilidad oxidativa de carne de bovino. Se usaron 799 bovinos (cebú x europeo) aleatorizados a 16 corrales en una engorda comercial de Veracruz. Treinta (30) días previos a la matanza, los tratamientos fueron: suplementación mineral, adicional a la tradicional, con las mismas dosis de Cu, Se y Zn, de fuente quelada o de fuente inorgánica, con y sin vitamina E. El peso a la matanza fue de 450.5 + 30.5 kg. Se seleccionaron aleatoriamente 12 bovinos por cada tratamiento para evaluar variables de calidad en la carne del músculo largo dorsal (rib eye). La carne se mantuvo a -20 °C hasta su proceso. En laboratorio se descongeló y maduró por uno y ocho días a 4 °C. La carne de animales que consumieron minerales inorgánicos tuvo la menor pérdida de agua por descongelación (P<0.05). La carne de animales que consumieron minerales quelados tuvieron mayores pH (P<0.05), capacidad de retención de agua y actividad de catalasa, pero menor fuerza de corte (P<0.05). La vitamina E disminuyó la pérdida de agua por goteo (P<0,05). Se observó una interacción entre la vitamina E y la fuente de mineral en las sustancias reactivas al ácido tiobarbitúrico (TBARS) a los ocho días de maduración, donde el uso de minerales de fuentes inorgánicas sin vitamina E permitió mayor actividad oxidativa. En general el uso de vitamina E y minerales quelados reduce pérdidas de agua, en la carne, las actividades oxidativas y la fuerza de corte.
