A B S T R A C TPowder products are characterized by their practicality and long life. However, fruit powders have high hygroscopicity and tend to agglomerate due to its hydrophilic nature. The isotherms of equilibrium moisture content apply to the study of dehydrated food preservation potential. Acerola is a nutritionally rich fruit, with great economic and industrial potential. The objective of this study was to analyse acerola powder adsorption isotherms obtained by lyophilization and characterize the powder obtained from lyophilized acerola pulp. Analysis of hygroscopicity, solubility and degree of caking were performed. Isotherms were represented by the mathematical models of GAB, BET, Henderson and Oswin, at temperatures of 25, 35 and 45 °C. According to the results, the obtained powder showed hygroscopicity of 5.96 g of absorbed water 100g -1 of solids, solubility of 95.08% and caking of 14.12%. The BET model showed the best fit to the adsorption isotherms of the acerola pulp powder obtained by lyophilization. The obtained isotherm was of type III, with a "J" shape. There was an inversion of the effect of temperature on the isotherms of acerola powders.Comportamento higroscópico do pó da polpa de acerola liofilizada R E S U M O Produtos em pó são caracterizados pela sua praticidade e vida útil longa; no entanto, os pós de fruta apresentam alta higroscopicidade e tendência à aglomeração devido à sua natureza hidrofílica. As isotermas de equilíbrio higroscópico se aplicam para estudo do potencial de conservação de alimentos desidratados. A acerola, por sua vez, é um fruto rico nutricionalmente e de grande potencial econômico e industrial. O objetivo do presente trabalho foi analisar as isotermas de adsorção do pó de acerola obtido por liofilização e caracterizar o pó obtido a partir de polpa de acerola liofilizada. Foram feitas as análises de higroscopicidade, do grau de caking e da solubilidade. Para representação das isotermas foram utilizados os modelos matemáticos de GAB, BET, Henderson e Oswin nas temperaturas de 25, 35 e 45 °C cujos resultados mostraram que o pó obtido apresentou higroscopicidade de 5,96 g de água absorvida 100g -1 de sólidos, solubilidade de 95,08% e caking de 14,12%. O modelo de BET foi o que melhor se ajustou às isotermas de adsorção do pó de polpa de acerola obtido por liofilização. A isoterma obtida foi do tipo III em formato de "J"; observou-se a ocorrência de uma inversão do efeito da temperatura sobre as isotermas dos pós de acerola.
This study aimed to evaluate the influence of maltodextrin addition on the flow properties of cocoa pulp powder obtained by spray and freeze drying. Cocoa pulp samples received 15% and 30% (m m-1) maltodextrin DE20. Two drying methods were used, spray and freeze drying. Powder morphology was evaluated through scanning electron microscopy (SEM). Wall friction angle, bulk density and tapped density were determined. Carr index (CI), Hausner ratio (HR) and flow index (FI) were used to evaluate powder flow. The particles powders obtained by spray drying showed rounded shapes, whereas the freeze dried powder showed irregular shapes. Increased maltodextrin concentration in the samples altered the powder particle size by spray drying and powder particle surface by freeze drying. The powder by spray drying of the sample with 30% of maltodextrin showed smallest wall friction angles, 13.4 to 14.9. The powder by freeze drying of the samples with 15% and 30% of maltodextrin showed wall friction angles between 14.0 and 20.6. Regarding flow, the powders by spray drying containing 30% of maltodextrin showed the best CI, HR and FI, 24.88, 1.33 and 4.88, respectively, being considered an acceptable flow. According to CI, HR and FI values, samples with 15% of maltodextrin produced powder classified as difficult flow in both methods applied. The higher maltodextrin concentration in cocoa pulp, the lower agglomeration in the powder by spray drying and the smoother particles surfaces in the powder by freeze drying. The addition of maltodextrin to the samples, for both drying methods, improve the powder flow and decrease the powder cohesion.
RESUMO-Frutas tropicais como a seriguela, embora muito apreciadas por seus aspectos sensoriais, são perecíveis e requerem técnicas específicas para sua conservação e comercialização. A secagem por atomização (spray-dryer) consiste em um método eficaz para obtenção de polpas de frutas em forma de pós. Além disso, a utilização de agentes carreadores de secagem promove um melhor manuseio do produto final, conferindo maior proteção contra a adsorção de umidade, contribuindo para redução na higroscopicidade do produto. Dessa forma, este trabalho teve por objetivo a aplicação do processo de secagem por spray-dryer em polpa de seriguela com adição de diferentes agentes carreadores (goma arábica, fécula de mandioca e maltodextrina) e posterior análise para verificação do comportamento higroscópico dos pós obtidos. As características analisadas foram: umidade, higroscopicidade e grau de caking. Observou-se que a formulação de polpa de seriguela em pó tendo como agente carreador a goma arábica apresentou os menores valores de umidade (4,84%), higroscopicidade (8,36%) e grau de caking (35,68%), quando comparado às demais formulações, indicando que esse produto apresenta melhor qualidadeetempo de vida útil mais prolongado. INTRODUÇÃOA seriguela (Spondias purpúreaL.), é uma fruta tropical muito apreciada e comercializada, tendo um crescente valor econômico no mercado. A B S T R A C TThis study evaluated the stability of cashew apple juice in powder, dehydrated in spouted bed and stored in two vacuum-sealed packages (laminated and plastic) for a period of 60 days. The parameters evaluated in this study were ascorbic acid, carotenoids, moisture, water activity, hygroscopicity, degree of caking, solubility and rehydration. Decreases in the contents of ascorbic acid and carotenoids were observed after 60 days. Moisture content remained practically unchanged during storage, and water activity showed a rising trend in the plastic package. In both packages, the powder showed low hygroscopicity and high caking formation. The solubility in both packages was higher than 90% and the time of rehydration of cashew apple juice in powder in the plastic package increased during storage. Cashew apple juice in powder stored in laminated package preserved better its physical and physico-chemical properties.Estabilidade do suco de caju em pó desidratado em leito de jorro R E S U M O Propôs-se, neste trabalho, avaliar a estabilidade do suco de caju em pó desidratado em leito de jorro e acondicionado em duas embalagens (laminada e plástica) seladas a vácuo pelo período de 60 dias. Os parâmetros avaliados foram: o ácido ascórbico, carotenoides, umidade, atividade de água, higroscopicidade, grau de caking, solubilidade e reidratação. Observaram-se, após os 60 dias, reduções nos teores de ácido ascórbico e carotenoides. A umidade praticamente não variou ao longo do armazenamento; já a atividade de água apresentou tendência de elevação na embalagem plástica. Em ambas as embalagens o pó apresentou baixa higroscopicidade porém com elevada formação de caking. As solubilidades nas duas embalagens foram superiores a 90% e o tempo necessário para reidratar o suco de caju em pó da embalagem plástica aumentou ao longo do armazenamento. O suco de caju em pó acondicionado na embalagem laminada a vácuo conservou melhor suas propriedades físicas e físico-químicas.
Acerola is a tropical fruit characterized by a high content of vitamin C. The food sorption isotherms reflect the way that the water binds to the food. This study aimed to fit mathematical models to the adsorption isotherms of the acerola pulp powder obtained by spray-drying, and. It was used acerola pulp containing 17.1% (m m -1 ) maltodextrin, and a spray-dryer with drying air temperature of 154°C. The mathematical models of GAB, BET, Henderson, and Oswin were applied to determine the isotherms, using temperatures of 25, 35 and 45°C. The hygroscopicity, degree of caking and solubility analysis were performed to characterize the powders. The powder showed hygroscopicity of 5.18, degree of caking of 3.67 and solubility of 94.88%. The evaluated mathematical models showed mean relative errors ranging from 10.18 to 29.13% and a coefficient of determination (R 2 ) ranging from 0.939 to 0.977. At 25°C, the Oswin model was the best fitted, whereas at 35 and 45°C the best fitting was obtained by the Henderson model. Type III (J-shape) isotherms were obtained, typical of high-sugar foods. The powder showed a low hygroscopicity and degree of caking in addition to a high solubility.
