RESUMO -O resíduo de granadilla é um subproduto que pode ser utilizado como substrato na fermentação de estado sólido para obtenção de um maior rendimento de compostos bioativos, possibilitando agregação de valor. Desta maneira, o presente estudo teve como objetivo avaliar a produção e/ou liberação de compostos bioativos (fenólicos totais e flavonoides totais) de resíduos de granadilla através da fermentação em estado sólido. A maior obtenção de flavonoides totais no extrato fermentado foi a 70 % de umidade com o solvente metanol em 48 h (1141,19 mg quercetina / g resíduo fermentado), e compostos fenólicos no extrato fermentado foi a 70 % umidade com o solvente acetona em 48 horas (671,25 mg GAE / 100 g resíduo fermentado). Portanto, os resultados indicam a possibilidade de utilização deste resíduo como substrato em processos biotecnológicos.
Resumo-A fermentação em estado sólido (FES) é considerada uma técnica alternativa para a extração e/ou produção de compostos bioativos. Diante disto, este estudo teve como objetivo determinar o teor de compostos bioativos e a atividade antioxidante de extratos aquosos da mistura de casca e sementes de tamarindo (Tamarindus indica) submetida ou não a FES com o fungo Aspergillus niger. A FES foi realizada em placas de Petri contendo o resíduo com umidade inicial de 70% e suspensão de esporos na concentração de 2x10 7 esporos/g de resíduo sendo incubadas à 30ºC por 168 h. Os maiores teores de compostos fenólicos (227,90 mg EAG/100 g resíduo em base seca) e flavonoides totais (76,89 mg QCE/g resíduo em base seca) foram obtidos após a fermentação do resíduo por 72h. Ambos extratos do resíduo fermentado (349,14 μmol trolox•g −1 resíduo) e não fermentado (348,24 μmol trolox•g −1 resíduo) demonstraram maior atividade antioxidante pelo método DPPH. Os extratos do resíduo fermentado e não fermentado de tamarindo demonstraram potencial como fonte natural de compostos bioativos.
