A alface (Lactuca sativa) é a hortaliça folhosa mais comercializada no Brasil, sendo considerada uma cultura hortícola de grande consumo. Devido ao seu baixo valor calórico qualifica-se para diversas dietas, o que favorece grandemente o seu consumo de uma maneira geral, constituindo-se em componente imprescindível das saladas dos brasileiros [6]. . The hydroponics lettuce samples showed the lowest total and edible part weight; they were inserted into Extra rate quality standard, according to the current legislation, whereas the organic and traditional lettuce samples were inserted into First and Second rate quality standard, respectively. The lettuce samples, independently of the growing process, showed low hygienic conditions, indicated by the presence of parasites of animal or human origin, and high concentration of fecal coliforms; the organic lettuce samples showed the highest frequencies of enteroparasities and fecal coliforms concentration, followed by the traditional and hydroponics lettuce samples. Considering the obtained results, the importance of this kind of food in the transmission of enteroparasities is stressed, as well as the need of actions which improve the sanitary conditions of these products.
-INTRODUÇÃODentre as mais importantes frutas tropicais atualmente cultivadas no mundo, o mamão ocupa, evidentemente, um lugar de destaque [15]. Segundo a FAO [8], o Brasil é o país que mais produz mamão em escala internacional, concentrando 31,6% da oferta mundial, seguido da Nigéria com 13,9%, México com 10,7%, Indonésia com 9,1% e Índia com 8,4%. A produção brasileira foi de 1.700.000 ton., a nigeriana foi de 751.000 ton. e a mexicana 575.558 ton. GENÓTIPOS MELHORADOS DE MAMÃO (Carica papayaLOs frutos frescos são parte essencial de uma dieta humana balanceada. São ricos em vitamina C, carotenóides (provitamina A), sais minerais e carboidratos e, apreciados por suas excelentes propriedades sensoriais, em particular por sua cor, aroma e sabor [25].Durante o processo de amadurecimento de frutas, inúmeras transformações na sua composição se realizam, principalmente, considerando-se a enorme variedade de compostos químicos que elas contém. As mais importantes são as de significância para o consumidor. No caso do mamão, estas alterações podem ser facilmente identificadas por serem as responsáveis pelas evidentes mudanças na coloração, aroma, sabor e textura destes frutos, que correspondem às principais transformações bioquímicas de interesse comercial, que ocorrem com os pigmentos, compostos voláteis, ácidos orgânicos e carboidratos desses frutos [4]. RESUMOO presente trabalho teve por objetivo avaliar genótipos promissores através da avaliação sensorial e físico-química de frutos de doze genótipos melhorados de mamão (CMF008, CMF012, CMF018, CMF019, CMF020, CMF021, CMF022, CMF023, CMF030, CMF031, CMF036, CMF047), provenientes do Banco Ativo de Germoplasma da EMBRAPA Mandioca e Fruticultura, Cruz das Almas, Bahia, em dois anos consecutivos (1999 e 2000). As amostras dos doze genótipos foram submetidas à avaliação sensorial para os atributos aparência, cor, aroma, sabor e textura, através de testes afetivos utilizando-se escala hedônica estruturada de nove pontos. Realizou-se determinações de pH, acidez total titulável, sólidos solúveis (ºBrix), "ratio" e ácido ascórbico. Nas duas épocas de estudo, verificou-se que as maiores médias de aceitação para o atributo cor foram obtidas pelos frutos dos genótipos CMF008, CMF020, CMF021, CMF022, CMF023, CMF030, CMF031 e CMF036 que apresentaram coloração vermelho-alaranjada e os frutos dos genótipos CMF012, CMF022, CMF023, CMF031 e CMF047 obtiveram maior aceitação dos provadores alcançando médias elevadas para o atributo sabor. Constatou-se que as texturas mais firmes da polpa de mamão foram as mais aceitas, atingindo médias elevadas os frutos dos genótipos CMF008, CMF012, CMF022, CMF023, CMF030, CMF031, CMF036 e CMF047. Constatou-se, também, que os frutos dos genótipos CMF012, CMF020, CMF031 e CMF047 apresentaram os mais elevados valores de sólidos solúveis (12 a 14ºBrix) e os frutos dos genótipos CMF020 e CMF031 revelaram quantidades elevadas de ácido ascórbico, ao redor de 100mg%. -The present study evaluated the sensory quality of chocolates obtained from two cocoa cultivars (PH16 and SR162) resistant to Moniliophtora perniciosa mould comparing to a conventional cocoa that is not resistant to the disease. The acceptability of the chocolates was assessed and the promising cultivars with relevant sensory and commercial attributes could be indicated to cocoa producers and chocolate manufacturers. The descriptive terminology and the sensory profile of chocolates were developed by Quantitative Descriptive Analysis (QDA). Ten panelists, selected on the basis of their discriminatory capacity and reproducibility, defined eleven sensory descriptors, their respective reference materials and the descriptive evaluation ballot. The data were analyzed using ANOVA, Principal Component Analysis (PCA) and Tukey's test to compare the means. The results revealed significant differences among the sensory profiles of the chocolates. Chocolates from the PH16 cultivar were characterized by a darker brown color, more intense flavor and odor of chocolate, bitterness and a firmer texture, which are important sensory and commercial attributes. Chocolates from the SR162 cultivar were characterized by a greater sweetness and melting quality and chocolates from the conventional treatment presented intermediate sensory characteristics between those of the other two chocolates. All samples indicated high acceptance, but chocolates from the PH16 and conventional cultivars obtained higher purchase intention scores. Kefir is a fermented beverage that deserves special attention, since it has probiotic activity and unique sensory, nutritional, and therapeutic properties. Given that both kefir and soymilk are beneficial to human health, this study aimed to assess the physicochemical characteristics and acceptability of soymilk Kefir-based functional beverages (SKB) properly inoculated with lactobacilli strain after 16h of incubation at 37 °C. Ot was monitored lactobacilli cell viability, yeasts count, pH, titratable acidity, lipids, proteins, ash, total solid, carbohydrates, caloric values and acceptability of the products. Additionally was conducted a shelf-life study of SKB added of peach-flavor. The lactobacilli cell count ranged from 7.0 to 8.0 Log 10 CFUmL -1 and pH values from 4.5 to 4.6. SKB samples with higher soymilk kefir percent presented higher lactobacilli cell count and lower lipid, ash, total solid, carbohydrate and caloric value. Results showed similar preferential rates for the SKB up to 30% of added soymilk kefir. The functional peach-flavored beverage presented appropriate pH value (4.3) and high viable cells count (7.0 Log 10 CFUmL -1 ) up to the 28 th day of cold storage, showed high acceptability (94.5%) and positive purchase intention (83.4%) among consumers.
-The "cocoa honey" is a local denomination to the clear liquid extracted from the cocoa mass, which cover the seeds, before the cocoa fermentation process. This material is attractive regarding its sensory and technological aspects; however, its use for consumption is still restricted. The purpose of this study was to produce diet jelly using the "cocoa honey" and to carry out the chemical and sensory characterization of the products. For the preparation of the jellies were used the following ingredients: slow metoxilation grade pectin, polidextrose, sorbitol, maltitol, tricalcium phosphate, potassium sorbate and cocoa powder. The diet jellies studied were: F1 (0.0015% thaumatin and 0.005% sucralose); F2 (0.0015% thaumatin and 0.002% acesulfame-k); F3 (0.005% sucralose and 0.002% acesulfame-k). It also was produced a control treatment (40.0% sucrose). The chemical and sensory data were analyzed by ANOVA, Tukey test and Internal Preference Map (MDPREF). The F3 treatment (sucralose and acesulfame-k) was the favorite diet jelly by the consumers, it differed significantly (p<0.05) of F1 (thaumatin and sucralose) and F2 (thaumatin and acesulfame-k) treatments related to color, chocolate odor, sweet taste, acid taste, chocolate flavor and consistency attributes; it also obtained higher purchase intention score. The use of the thaumatin sweetener showed unsuitable, it did not replace the sweetness in the jelly of "cocoa honey". The results indicated the feasibility of technological profit of the "cocoa honey" as raw material in the preparation of diet jelly, which presented good sensory and nutritional characteristics. APROVEITAMENTO TECNOLÓGICO DO "MEL DE CACAU" (Theobroma cacao L) NA PRODUÇÃO DE GELEIA SEM ADIÇÃO DE AÇÚCARRESUMO -O "mel de cacau" é uma denominação regional do líquido transparente extraído da polpa do cacau, que cobre as sementes, antes do processo de fermentação do cacau. Este material é atrativo do ponto de vista de seus aspectos sensorial e tecnológico; entretanto, seu uso para o consumo ainda é restrito. O propósito deste estudo foi produzir geleia dietética usando o "mel de cacau" e realizar a caracterização química e sensorial dos produtos. Para a preparação das geleias, foram usados os seguintes ingredientes: pectina de baixo grau de metoxilação, polidextrose, sorbitol, maltitol, fosfato tricálcico, sorbato de potássio e cacau em pó. As geleias dietéticas estudadas foram: F1 (0,0015% taumatina e 0,005% sucralose); F2 (0,0015% taumatina e 0,002% acessulfame-k); F3 (0,005% sucralose e 0,002% acessulfame-k). reSuMoFoi determinado o perfil sensorial descritivo de três amostras de iogurte light, sabor pêssego, pela metodologia fundamentada na Análise Descritiva Quantitativa (ADQ). A equipe sensorial definiu os termos descritores, os materiais de referência para o treinamento das qualidades e quantificações de cada um dos termos e a ficha de avaliação das amostras, de forma consensual. Dez provadores foram selecionados e rigorosamente treinados para compor a equipe definitiva, utilizando-se como critérios o poder discriminativo, reprodutibilidade e consenso dos provadores entre si. Foram gerados doze termos descritores pelo método de rede. A intensidade de cada descritor foi avaliada em cada amostra por escala não estruturada de nove centímetros, com termos de intensidade ancorados em seus extremos, sendo o mínimo à esquerda e o máximo à direita. Os dados foram analisados por ANOVA, Teste de Tukey e Análise de Componentes Principais (ACP). Os resultados indicaram que as amostras comerciais apresentaram grande variação em seus perfis sensoriais. Na ACP, ficou evidenciado que a amostra A foi caracterizada principalmente pelos atributos gosto doce, sabor pêssego e firmeza dos pedaços de fruta. A amostra B foi caracterizada pelos atributos brilho, cor pêssego e cremosidade, e a amostra C foi caracterizada pela maior intensidade dos atributos gosto ácido, adstringência, textura farinácea e aroma artificial de pêssego. De acordo com o teste de aceitação, todas as amostras apresentaram boa aceitação em todos os atributos avaliados. Desta maneira, a análise do perfil sensorial da amostra C, que contém proteína de soja na sua formulação, revelou que este ingrediente não foi percebido pelos provadores, e não interferiu na sua aceitação. The descriptive terminology and sensory profile of three samples of peach flavored light yogurt were determined using methodology based on the Quantitative Descriptive Analysis (QDA). A sensory panel consensually defined sensory descriptors, their respective reference materials and the descriptive evaluation ballot. Ten individuals were selected as judges and trained. They used the following as criteria: discriminant power, reproducibility and individual consensus. Twelve descriptors were devised showing similarities and differences among the light yogurt samples. Each descriptor was evaluated using a nine-centimeter non-structured scale with the intensity terms anchored at its ends. The data were analysed by ANOVA, the Tukey test and the Principal Component Analysis (PCA). The results showed a great difference in the sensory profile of light yogurts, where sample C showed more variation. Summary This work evaluated the influence of bioactive compounds on the sensory profile and acceptability of dark chocolate produced from Brazilian hybrid cocoa. The results showed that higher contents of catechin, epicatechin, caffeine, total phenolic compounds and flavonoids contributed to higher intensity of bitterness, cocoa flavour, acid taste, and astringency, and negatively affected the acceptance of chocolate samples from the TSH1188, PH16, and CEPEC2002 varieties. Other varieties SR162 and BN34 showed lower contents of caffeine and phenolic compounds, and higher concentration of theobromine, revealed notes of sweet/caramel and fruity flavour, presented a higher acceptance. This research showed the great potential of the ‘Catongo’ (SR162) and BN34 hybrids from southern Bahia (Brazil) for the production of fine cocoa. The chemical and sensory evaluations may be a strategic tool to help cocoa producers in deciding which genetic varieties should be marketed as fine cocoa, adding value to the product and highlighting promising cocoa varieties.
