IntroduçãoO Brasil é um dos três maiores produtores mundiais de goiaba (Psidium guajava L.), sendo a cultivar Pedro Sato a preferida no mercado nacional (AZZOLINE et al., 2005). Constitui-se em um dos frutos de maior importância nas regiões subtropicais e tropicais, não só devido ao seu elevado valor nutritivo, mas pela excelente aceitação do consumo in natura, pela sua grande aplicação industrial, como também porque pode se desenvolver em condições adversas de clima (GONGATTI NETTO; GARCIA; ARDITO, 1996). Em termos de mercado brasileiro a goiabada ou doce em massa de goiaba é um dos produtos industrializados de fruta mais consumidos pela classe média baixa e pela faixa de menor poder aquisitivo da sociedade (PEÇANHA et al., 2006). A goiabada ou doce em massa de goiaba deve ter cor característica do produto, variando de vermelho amarelado a vermelho amarronzado, odor e sabor característicos lembrando a goiaba, aparência gelatinosa e sólida, permitindo corte (MORI; YOTSUANAGI; FERREIRA, 1998).Os doces em massa são resultantes do processamento adequado das partes comestíveis dos vegetais, adicionados de açúcares, água, pectina (0,5 a 1,5% em relação à polpa), ajustador de pH (3 a 3,4), além de outros ingredientes e aditivos permitidos até alcançar a consistência adequada, assegurando estabilidade ao produto. Após o processamento, os doces devem ser devidamente embalados e armazenados em condições ambientais (JACKIX, 1988; ABIA, 2001). De acordo com Albuquerque (1997), fatores intrínsecos, como o grau de esterificação da pectina e o pH do doce, e fatores extrínsecos, como pré-processamento da fruta, temperatura de cocção, tamanho da embalagem, tempo e temperatura de geleificação, além da ordem na colocação dos ingredientes, afetam o processo AbstractThe shelf life of preserves can be extended by the use of preservatives and other combined preservation methods. The objective of the present study was to verify the effects of potassium sorbate and citric acid concentrations and the pulp:sugar ratio on the physical and physicochemical characteristics of guava preserve formulations. A complete 2 3 factorial design was used with 3 central points. Linear models were fitted to describe the responses as a function of the significant factors. The results showed that the potassium sorbate concentration had little effect on the responses analysed, except for the pH. The pulp/sugar ratio and the citric acid concentration are the most relevant variables to this process. The citric acid concentration and the pulp:sugar ratio must be increased to obtain firm preserves and greater yield. Keywords: fruits; processing; quality. The treatment of a food in liquid media involves mass transfer and could aid to preserve some food properties. The assistance of ultrasound (US) could even improve the process. Therefore, the aim of this study was to evaluate US (frequency 25 kHz, powder intensity 8 kW m–3) in tomato treatment in sucrose and NaCl solutions, common osmotic agents. Moreover, for testing the influence of the media, distilled water and maltodextrin solution completed the set of tested liquids. Water loss (WL), solid gain (SG), water activity (aw), color parameters, like the total color difference (ΔE) and microstructure were evaluated. The advantages of NaCl and sucrose solutions were the high WL and SG values besides low aw and ΔE. The alterations in the microstructure of US-treated samples in distilled water or maltodextrin suggested that a product with low solid incorporation and reduced drying time could be obtained in a further drying.
In this study, the ‘yacon’ was dried using pulsed vacuum osmotic dehydration as pretreatment followed by vacuum drying (at different temperatures) or convective drying. The use of osmotic dehydration and vacuum drying had their influence evaluated concerning drying kinetics and quality of the final product, considering fructan retention, color, and water activity. Fick’s second law and Page’s equation were suitable for the fitting of drying evolution. It was observed that higher temperatures (60 °C) resulted in shorter drying time, higher diffusivity, and higher fructan retention when compared to 40 and 50 °C. The osmotic pretreatment and the vacuum drying differed in fructan retention (p ≤ 0.05). Moreover, the dried product, osmotically pretreated, presented a shorter drying time. The best condition was vacuum drying at 60 ºC, preceded by pulsed vacuum osmotic dehydration that resulted in fructan retention of approximately 38% in a quicker, higher diffusivity and lighter color product concerning the other tested conditions.
This study aimed to evaluate the infl uence of the independent variables concentration of citric acid, concentration of potassium sorbate, and pulp/sugar ratio on consumer acceptance for sweet guava. The results were analyzed using statistical methods such as preference map and response surface methodology to determine the infl uence of the independent variables. Response surface methodology alone proved insuffi cient to achieve an optimal formulation for the preparation of sweet guava. Based on preference mapping analysis, consumer preference was observed for treatments using higher concentrations of sugar and citric acid. Parameters of sweetness, appearance and texture infl uenced consumer preferences.
RESUMO -A Passiflora edulis Sims é conhecida popularmente no Brasil como maracujá azedo ou amarelo, sendo muito utilizada na medicina popular e interessante para indústrias farmacêuticas e alimentícias, devido a sua propriedade calmante. O objetivo desse trabalho foi caracterizar os compostos bioativos nos extratos das folhas de Passiflora edulis Sims e comparar a eficiência de diferentes processos de extração. As amostras foram secas, moídas e, então, caracterizadas segundo sua densidade real e aparente, teor de voláteis e umidade, porosidade e diâmetro médio das partículas. Posteriormente, foram realizadas, extrações etanólicas (EE), etanólicas acedificadas (EAC) hidroalcoólicas (EH) e aquosas (EA) e em leito fixo, sendo quantificado nos extratos os compostos bioativos fenólicos, flavonoides e carotenoides. O pó das folhas de Passiflora edulis apresentou 2,30% de umidade e voláteis, densidade aparente de 0,322 g/cm 3 , densidade real de 1,1538 g/cm 3 , porosidade média de 0,719 e diâmetro médio de partículas de 0,5487 mm. As determinações dos rendimentos globais das extrações para EE, EAC, EH e EA, foram respectivamente de 5,0549%,,5,8791, 13,2411% e 24,9192%; os teores de flavonoides foram de 12,7842 mgQU/g, 7,8438 mgQU/g, 5,3865 mgQU/g e 2,1910 mgQU/g; de fenóis, 34,3948 mgAG/g, 35,3853 mgAG/g, 24,8931 mgAG/g e 22,9080 mgAG/g e de carotenoides, 0,8278mg/100g, 0,7195mg/100g, 0,0823 e 0,2649 mg/100g. De modo geral, as extrações aquosas apresentaram maior rendimento global.
O artigo objetiva analisar a Assembleia Nacional Constituinte na perspectiva das discussões sobre a reforma agrária no Brasil. Trata-se de um estudo histórico da formação de uma compreensão sobre o direito de propriedade e os reflexos dessa compreensão na estrutura política e jurídica do Brasil. Identifica como cada Constituinte brasileira se posicionou diante da questão agrária. Analisa as discussões da Assembleia Nacional Constituinte de 1987 nas comissões temáticas em que foi discutida a reforma agrária. Constitui-se como um estudo crítico do constitucionalismo brasileiro e aponta os limites da Constituição de 1988 no tocante à questão agrária. Utiliza o método histórico e analítico, com pesquisa bibliográfica e documental. Conclui pelo retrocesso da Constituição de 1988 no tocante à possíveis alterações da estrutura fundiária brasileira, em razão do modelo de desapropriação para fins de reforma agrária que se inscreveu na Constituição de 1988, a partir da crítica ao funcionamento e deliberações da Assembleia Nacional Constituinte de 1987.AbstractThe article aims to analyze the discussion of Agrarian Reform in the Brazilian 1987 Constitutional Assembly. This is a historical study about the understanding of the right of ownership and the consequences of this understanding in the political and legal structure in Brazil. It identifies how each Brazilian Constitutional Assembly discussed the Agrarian Reform. It also analyzes all thematic committees regarding Agrarian Reform that were discussed in the 1987 Constitutional Assembly. The article is a critical study of Brazilian 1988 Constitution and it is a historical and documentary research. It concludes that the Brazilian 1988 Constitution still kept the same agrarian structure and contributed very little to change the legal provision of land expropriation that Agrarian Reform required.KeywordsRight of ownership.
