O leite é um alimento com alto valor nutritivo, pois apresenta em sua constituição água, proteínas, carboidratos, lipídeos, vitaminas e sais minerais. Em virtude de sua composição rica em nutrientes, torna-se um alimento altamente perecível, sendo muito susceptível a alterações por micro-organismos deterioradores e patogênicos. Desta forma, este trabalho tem como objetivo analisar a qualidade microbiológica do leite cru e do leite pasteurizado comercializados no município de Benevides-PA. Foram realizadas análises microbiológicas de contagem padrão de bactérias aeróbias mesófilas, Coliformes Totais e Coliformes Termotolerantes. Todas as análises seguiram a metodologia descrita na Instrução Normativa nº 62, de 26 de Agosto de 2003, do Ministério da Agricultura, Pecuária e Abastecimento. As médias dos resultados microbiológicos mostraram que as amostras de leite cru apresentaram contagem máxima de Coliformes Termotolerantes e Totais. Em contrapartida, não houve contaminação de Coliformes em nenhuma amostra de leite pasteurizado. Em relação aos resultados de contagem padrão de bactérias aeróbias mesófilas, verificou-se que as médias para as amostras de leite cru e leite pasteurizado foram de 4 × 104 UFC/mL e 6,1 × 102 UFC/mL, respectivamente. Apesar da presença desses micro-organismos, as amostras encontram-se dentro do permitido pela Instrução Normativa 51. Diante dos resultados obtidos, pode-se verificar a importância da utilização da pasteurização, como tratamento térmico para garantir a qualidade da matéria prima. A qualidade, hoje, é uma vantagem competitiva que diferencia uma empresa de outra, onde os consumidores estão mais atentos e preocupados com questões relativas à segurança dos alimentos. O sistema de Análise de Perigos e Pontos Críticos de Controle tem como objetivo a produção e a preparação de alimentos seguros a partir de uma abordagem preventiva, buscando garantir que os produtos elaborados não causem danos ao consumidor. O consumo de pães tem aumentado entre os brasileiros, mostrando que se preparar para atender a essa demanda crescente por panificados é uma necessidade das padarias. Torna-se importante conciliar o aumento na oferta de produtos e serviços com uma redução de custos e padronização dos pães, aumentando a confiabilidade do cliente. Este trabalho objetivou a elaboração de propostas de plano APPCC em produtos de panificação de um estabelecimento localizado na cidade de Castanhal-PA. Para tal, realizou-se a aplicação de um check-list no local para a verificação dos programas de pré-requisitos, classificando-se no Grupo 1 (Bom), com 76,19% de conformidade. Na elaboração do plano, por meio do preenchimento de formulários e análises dos processos, identificou-se ingredientes críticos (farinha de trigo e fermento biológico) e pontos críticos de controle (PCC’s) nas etapas de Recepção de Ingredientes, Cozimento e Embalagem/ Rotulagem. Os resultados evidenciaram a relevância do plano APPCC, sendo este aliado à qualidade do produto, não só nos quesitos microbiológicos, químicos e físicos, mas também no da padronização dos produtos. Prevenindo às perdas, reduzindo os custos e aumentando a lucratividade do local.
Atualmente, hortaliças in natura são amplamente recomendadas como parte da alimentação diária. Porém, podem tornar-se potenciais fonte de micro-organismos patogênicos. Este trabalho objetivou avaliar a eficiência de três tipos de sanitizantes na eliminação/redução da carga microbiana de Escherichia coli, coliformes a 35 °C e Staphylococcus aureus em alfaces. Foram utilizados três sanitizantes: hipoclorito de sódio, dicloroisocianurato de sódio e ácido acético. As hortaliças foram distribuídas em três grupos: T0 (grupo controle), T5 e T15 (tratamento com 5 e 15 minutos de imersão nos sanitizantes, respectivamente). Os resultados mostraram que o tipo de sanitizante e o tempo de tratamento da sanitização apresentaram efeito significativo (p < 0,05) sobre os micro-organismos. O Grupo T0 apresentou os maiores valores de Log de UFC g-1, enquanto que o Grupo T15 apresentou os menores valores. O intervalo de 0 – 15 min de tratamento de sanitização apresentou os maiores números de redução decimal - NRD da carga microbiana para todos os sanitizantes testados, quando comparado com o outro intervalo de tempo 0 – 5 min. Nos dois intervalos de tempos de tratamento, o hipoclorito de sódio foi o sanitizante que mais diminuiu o número de coliformes totais e Staphylococcus aureus. Em contrapartida, o ácido acético foi o que obteve menor eficiência em relação às médias de NRD para os mesmos micro-organismos
