PurposeMesquite pods offer a high nutritional content; A flour can be produced from them; nevertheless, the moisture content makes the milling process difficult. Then, before the milling operation a drying process must be implemented, but drying technology must be studied in order to characterise the process and identify the effect of drying temperature on the magnitude of drying rate.Design/methodology/approachProsopis Laevigata pods were collected in Oaxaca (Southern of Mexico) and they were dried. Three stages of maturity were identified and pods in the stage three of maturity were dried by forced convection. The internal structure of the pods was analyzed by scanning electron microscopy (SEM). The pods were dried in a tunnel dryer at 40, 50, 60 and 70° C, 10% relative humidity and air velocity of 2.6 m/s. From experimental data, a lumped analysis was conducted for drying.FindingsWe found that the internal microstructure of this material is a limiting factor for moisture migration. In order to reduce the moisture content in the pods, a minimum air temperature of 60° C must be applied. The characteristic drying curve shows a good agreement with the experimental drying kinetics. The nutritional composition (carbohydrates, sugar and protein) of pods reveals important applications for the food industry.Practical implicationsThe mesquite pods are important ethnic foods. In order to obtain flour, the drying of pods is mandatory. Drying must be applied in stage three of maturity which can be identified based on color changes and moisture content. The moisture content affects the performance of milling operation, then a minimum drying temperature of 60° C and low relative humidity must be applied. SEM images show the complex microstructure of the pods which hinders the moisture diffusion. The drying characteristic curve was deduced for the first time; it helps to understand the drying behavior of pods. The chemical composition of mesquite pods reveals interesting applications for the food industry. The methodology for drying is useful for researchers and producers.Originality/valueMezquite pods is an interesting ethnic food for people with celiac disease. This is the first time a research paper describes the drying process at detail. The SEM images, the convective drying operation and the characteristic curve are presented for the first time. The information will be useful for the industry and academia.
En México es poco común la formulación de productos panificados desde harinas de maíz (Zea mays) adicionadas con harinas de otros cereales, leguminosas, oleaginosas o frutos secos o ambos, con el propósito de obtener productos con propiedades sensoriales o nutricias mejoradas. En esta investigación se evaluaron las propiedades sensoriales, textura y grado de aceptación, de láminas panificadas (conocidas en México como totopos) con una base de harina de cinco razas de maíz y harina integral de ajonjolí (Sesamum indicum) como aditivo en las proporciones 20:0, 19:1, 18:2, 17:3. Las propiedades de efecto crujiente, frescura y dureza se evaluaron mediante el análisis cuantitativo y cualitativo de los patrones de esfuerzo (TPA), mientras que el grado de aceptación se evaluó por un panel no entrenado. El diseño experimental fue factorial con dos factores y tres repeticiones por nivel (n=60). Las diferencias entre medias se evaluaron con la prueba de Tukey (p≤0.05). Las masas panificables evaluadas presentaron diferencias en las propiedades sensoriales, efecto crujiente y frescura, en una relación de harina de maíz:harina de ajonjolí17:3 (p/p). El grado de aceptación de los productos panificados no cambió con ninguna proporción de harina mixta.
Las hojas de estevia (Stevia rebaudiana) son fuente de compuestos bioactivos benéficos para la salud humana; entre ellos destacan los glucósidos de esteviol. El valor comercial de las hojas deshidratadas de estevia se relaciona con su apariencia física y con la concentración de glucósidos. La hipótesis del estudio fue que la calidad de las hojas de estevia, con base en contenido de compuestos bioactivos presentes en las hojas puede ser visible y modificado por el secado. Para probarla, el objetivo fue evaluar el efecto de la temperatura, la velocidad de aire y la densidad de carga de hojas de estevia en un secador de lecho fluidizado no empacado y empacado sobre las características de color, concentración de glucósidos de esteviol (esteviósido y rebaudiósido A), concentración de compuestos fenólicos totales, concentración de flavonoides, y capacidad antioxidante. Las variables fisicoquímicas se evaluaron por medio de coordenadas CIEL*a*b*, cromatografía de líquidos fase reversa, métodos colorimétricos de Folin-Cicolteau, cloruro de aluminio y ensayo de inhibición de radicales libres DPPH*. El efecto de las variables de proceso se evaluó con un diseño de factorial completo con 24 combinaciones de factores y tres repeticiones de muestreo. La configuración de lecho fluidizado afectó (p≤0.05) la concentración de glucósidos de esteviol en el material foliar seco. En las dos configuraciones el contenido de glucósidos de esteviol aumentó entre 230-290% comparado con el material foliar fresco. Para la configuración de lecho no empacado, el retrogusto amargo (relación rebaudiósido A/esteviósido) fue mayor que el original evaluado en el material fresco. Todas las variables de proceso tuvieron influencia significativa en la concentración de polifenoles. La configuración con lecho empacado incrementó la concentración de compuestos fenólicos (p≤0.05) hasta 248%. En tanto que, con lecho no empacado disminuyó hasta un 17% (p≤0.05) en relación con el material fresco. La disminución en los tiempos de secado y el incremento de compuestos bioactivos (glucósidos de esteviol y compuestos antioxidantes) en la hoja de estevia, hacen de este método de secado una herramienta útil para el manejo y la preservación de materiales vegetales que contengan metabolitos secundarios de importancia económica.
