El eje de este trabajo se inscribe en la integralidad de funciones y desarrolla la experiencia de la cá-tedra de Educación y Comunicación Alimentario Nutricional (ECAN) de la Licenciatura en Nutrición, perteneciente a la Facultad de Bromatología de la Universidad Nacional de Entre Ríos. Con el desafío de brindar al estudiantado la oportunidad de traba-jar en escenarios donde el aprendizaje y la enseñan-za son bidireccionales, que les permita involucrarse en la toma de decisiones del proceso de investiga-ción y en la resolución de problemas reales de la comunidad, nos propusimos diseñar prácticas de in-vestigación y extensión integradas al currículo uni-versitario. En este marco, se generó en 2018 el pro-yecto de Investigación Acción Participativa (IAP): “Concepciones y saberes educativos y comunicacio-nales sobre las prácticas comunitarias de preven-ción y promoción de la salud, destinada a jóvenes y adultos, de lxs profesionales y equipos de Salud de la ciudad de Gualeguaychú”, cuyas líneas de acción se constituyen en acciones de extensión crítica.
El presente artículo aborda los principales hallazgos resultantes de la sistematización de una experiencia de curricularización de la extensión universitaria, desarrollada en la cátedra de Educación y Comunicación Alimentario Nutricional (ECAN) de la Licenciatura en Nutrición de la Facultad de Bromatología, Universidad de Entre Ríos (UNER) durante el período 2008-2014. Se propuso reflexionar sobre los resultados de la experiencia en el proceso de enseñanza y aprendizaje, fundamentalmente desde la voz de los/las estudiantes. Los resultados que surgen del análisis y la experiencia recorrida invitan a pensar la curricularización de la extensión universitaria como una posibilidad concreta de generar procesos de enseñanza y aprendizaje más allá del aula, en articulación con la sociedad, donde los grupos de estudiantes se formen como profesionales críticos y comprometidos con la realidad, capaces de identificar las demandas, intereses y necesidades de la comunidad y de construir conocimiento colectivo emancipatorio.
