The industrial processing of acerola (Malpighia emarginata D.C.) produces huge quantities of waste material that are badly discarded or undervalued. In spite of this, acerola wastes have a high content of antioxidant compounds. The aim of this work was to study the extraction of antioxidant compounds from acerola residues using ultrasound assisted extraction. Using multiple regression techniques, the effects of ethanol concentration in the hydroethanolic solution (C), extraction time (t), temperature (T), and liquid-solid ratio (R) on the total phenolic content, total flavonoid content and antioxidant potential were investigated. The best extraction conditions were identified using the desirability function, which is a multi-response optimization technique. The optimal processing parameters were 67.5% of ethanol concentration, temperature of 80.9 °C, liquid/solid ratio of 59.8 mL/g, and extraction time of 13.6 min. HPLC-UV has been used to identify the main antioxidant compounds obtained under these optimal condition. Based on the results, acerola waste has high potential for better use, such as in food and pharmaceutical applications.
Acerola (Malpighia emarginata D.C.) is a fruit rich in antioxidants and vitamins, whose processing generates large quantities of residues. This waste is potentially useful due to the presence of important bioactive compounds, but its high moisture level makes it difficult to use. This work evaluates the impact of dehydration in a thick‐layer dryer on the bioactive compounds of acerola residues. The compounds analyzed before and after dehydration were: total phenolics, total flavonoids, and ascorbic acid. The presence of important compounds for the food and pharmaceutical industries was found using nuclear magnetic resonance and gas chromatography–mass spectrometry. The effects of operating variables on the bioactive compounds were quantified. The heterogeneity of the material as a function of the axial bed position was also investigated. Practical applications The acerola is increasingly used in the form of juice, jelly and compote owing to its high levels of ascorbic acid and other important bioactive compounds. The wastes from acerola processing can contain higher amounts of phenolic and other bioactive compounds than the edible fleshy parts. In this study, the effect of convective thick‐layer drying on the main bioactive compounds (phenolics, flavonoids and ascorbic acid) of the acerola residues was investigated. The analysis using nuclear magnetic resonance (NMR) and gas chromatography–mass spectrometry (GC–MS) also allowed the identification the presence of important compounds in dehydrated acerola residues, such as phytosterols, malic and linoleic acids. Results show that these residues are a potentially useful resource to be explored and that the dehydration of acerola residues in a thick‐layer fixed‐bed dryer is an interesting alternative for the possible reuse of this material if performed under adequate operating conditions.
RESUMO -Assim como a maioria dos resíduos provenientes do processamento de frutas, o resíduo de acerola as cascas do abacate e da mexerica são ricas fontes de vitaminas e do complexo B, além de muitos princípios ativos, que têm forte poder antioxidante auxiliando na prevenção de doenças degenerativas. Uma operação utilizada no processo de aproveitamento deste material é a secagem, facilitando o seu transporte e diminuindo a sua atividade microbiana. O presente trabalho teve por objetivo quantificar os teores dos compostos bioativos: ácido ascórbico, fenólicos e flavonoides, além do teor de acidez do resíduo de acerola e das cascas da mexerica e do abacate quando submetidos à desidratação pela emissão de luz infravermelha. As variáveis estudadas foram o tempo e a temperatura do ar, visando preservar o teor dos compostos bioativos. INTRODUÇÃOAs frutas tropicais são comumente consumidas in natura, uma vez que suas características de cor, textura, aroma e propriedades nutricionais podem ser melhor apreciadas nestas condições. Entretanto, por serem extremamente perecíveis, são, em sua grande maioria, processadas e tornam-se produtos como sucos, néctares, polpas, geleias e doces. Desta maneira, o processamento colabora com o aumento da vida útil, além de facilitar o transporte e agregar valor ao produto (BARRET et al., 2005). Após o processamento, as frutas geram subprodutos, e estes representam perdas econômicas no processo produtivo e se não receberem destinação adequada podem proporcionar problemas ambientais, devido a sua carga poluidora. Através de vários estudos realizados, constatou-se que após o processamento das frutas para elaboração de sucos e polpas, são obtidos quantia significativa destes resíduos (BÁRTHOLO, 1994).Entretanto, estudos recentes têm demonstrado que as frutas são ricas em muitos nutrientes e compostos antioxidantes, e que esses constituintes podem estar concentrados majoritariamente nas cascas e sementes, que são na maioria das vezes descartadas (COSTA et al., 2000;MELO et al., 2008;). O consumo destes alimentos está relacionado a efeitos benéficos à saúde, tais como redução do risco de câncer, Alzheimer, catarata e Parkinson. Estes efeitos são atribuídos às propriedades antioxidantes dos compostos bioativos, os quais inibem a oxidação de moléculas, evitando o início ou propagação das reações de oxidação em cadeia (AYALA-ZAVALA et al., 2011).
RESUMO -A casca da mexerica (Citrus reticulata blanoa) contém uma grande quantidade de compostos bioativos, em especial quando comparada com o suco da mesma, fenômeno muito comum entre as frutas. Devido a sua grande aceitabilidade no mercado e seus elevados teores de vitaminas, minerais e fibras, o presente trabalho procurou analisar a variação dos teores de ácido ascórbico, ácido cítrico, fenólicos totais e flavonoides totais na casca da mexerica in natura e quando submetida à secagem por irradiação infravermelha. Esse processo visa reduzir o volume e seu peso do material, o que facilita seu transporte, reduz os gastos e viabiliza o armazenamento por maiores períodos sem que ele seja deteriorado ou afetado pela ação de micro-organismos. Os testes de secagem foram realizados nas temperaturas: 60, 70, 80 e 90 °C. Pôde-se concluir que o modelo de Overhults é o que melhor descreve a cinética de secagem, apresentando um coeficiente de determinação médio de 0,9993 e a temperatura é uma variável importante para o tempo de secagem. O teor de ácido ascórbico elevou-se com o aumento da temperatura de operação. Excetuando o conteúdo de flavonoides totais, para a temperatura de 90°C todos os compostos apresentaram as maiores médias.Palavras chave: resíduos, antioxidantes, cinética de secagem INTRODUÇÃOCom bastante aceitação no mercado de frutas in natura, a mexerica pokan (Citrus reticulata blanco) é a mais cultivada no Brasil (Silva et. al., 2012). Combinations of plant polysaccharides can result in a wall material with desirable and appropriate encapsulating characteristics. The aim of this study was to evaluate the influence of a novel matrix based on galactomannan and Cashew gum on the microencapsulation of rosemary essential oil by spray drying. First, an emulsion was prepared, and sodium trimetaphosphate was added to cross-link the polysaccharides. A central composite rotatable design was then used to optimize the proportion of polysaccharides needed for the formation of microparticles. An increase in galactomannan concentration significantly affected viscosity (p <0.05), emulsion droplet size, and oil particle size. Higher retention and encapsulation efficiencies were observed for lower galactomannan concentrations. SEM photomicrographs showed no cracks or microparticle fissures. An appropriate percentage for the efficient encapsulation of rosemary essential oil was 19.4% (w/v) cashew gum and 0.4% (w/v) galactomannan.
