The objective of this study was to evaluate the use of natural antioxidants in tilapia fillets submitted to sous vide process. Four treatments were carried out using different natural antioxidants (Treatment 1 €“ control, without antioxidant; Treatment 2 €“ oregano extract; Treatment 3 - rosemary extract and Treatment 4 - basil extract) with six replicates. Analyzes of centesimal composition, microbiological composition and lipid oxidation through Thiobarbituric acid reactive substances (TBARS) were performed. There was a significant difference in moisture content, being higher for treatments with extracts, whereas the control treatment presented higher protein content. The fillets were within microbiological standards recommended by legislation. The values obtained from Malondialdehyde (MDA)/kg demonstrate the efficiency of natural antioxidants added. The use of plant extracts as natural antioxidants in sous vide has been shown to be an alternative to minimize oxidative rancidity of tilapia fillets, increasing shelf life. Thus, it is possible to use rosemary, oregano and basil extracts in the tilapia sous vide process.
RESUMO -Para o uso de biocatalisadores em larga escala é interessante que eles possam ser reutilizados, sendo a imobilização em suportes sólidos uma importante ferramenta por torná-los insolúveis no meio reacional. Nesse contexto o objetivo deste trabalho foi determinar, dentre diferentes suportes, qual poderia conferir maior estabilidade térmica à lipase de Rhizopus oryzae, imobilizada por adsorção física. Os suportes utilizados foram Caulim e Diatomita (com e sem acidificação). Foram avaliadas as atividades hidrolitica e de esterificação, bem como o rendimento de imobilização. Quanto à atividade hidrolítica, destaca-se o derivado imobilizado em Caulim sem acidificação com ativiadade de 1561,61U/g. Quanto ao rendimento de imobilização, os maiores valores também foram obtidos empregando-se o suporte Caulim sem acidificação (25,68%). Na atividade de esterificação, o derivado de caulim acidificado resultou em mais elevados valores, 1827,99U/g. A partir destes resultados, selecionaram-se os derivados imobilizados a serem avaliados quanto à estabilidade térmica nas temperaturas de 45°C, 55°C e 65°C. O desempenho obtido pelo derivado em Caulim acidificado e em Diatomita acidificada foram muito semelhantes, apresentando o tempo de meia vida em 45°C que foi de 18,5 horas e 19,5 horas, respectivamente.
