Resumo: O fruto da mangabeira apresenta diversas propriedades nutricionais e sobre este é crescente o interesse mercadológico, no entanto, asua reduzida vida útil póscolheita, tem inviabilizado o comércio a longas distâncias e o armazenamento. Este trabalho objetivou quantificar a atividade de peroxidase (POD) e polifenoloxidase (PPO)na polpa de frutos de mangaba, embalados em PVC e acondicionados a 10 e 25ºC, aos 3, 6 e 9 dias de armazenamento, e determinar a capacidade de películas de fécula de mandioca em inibir a atividade dessas enzimas. A atividade da POD foi sempre superior à de PPO, nas duas temperaturas e em todos os tempos de armazenamento testados. A temperatura de 25°C foi a que melhor inibiu a atividade das duas enzimas. Os dados não mostraram diferença estatística com relação à atividade de POD na polpa, em função da concentração de fécula utilizada na película de recobrimento dos frutos. Já para PPO a menor atividade foi encontrada na polpa dos frutos recobertos com a maior concentração de fécula testada (4%).
