SKŁAD CHEMICZNY, ROZPUSZCZALNOŚĆ KOLAGENU ŚRÓDMIĘŚNIOWEGO I TEKSTURA WYBRANYCH MIĘŚNI WOŁOWYCHS t r e s z c z e n i e Celem pracy było określenie składu chemicznego ośmiu mięśni jałowic oraz zmian rozpuszczalności kolagenu śródmięśniowego, profilu tekstury i siły cięcia w 2. i 14. dniu ich dojrzewania poubojowego. Badania prowadzono na mięśniach: pectoralis profundus (PP), infraspinatus (IS), triceps brachii (TB), serratus ventralis (SV), biceps femoris (BF), semimembranosus (SM), semitendinosus (ST) oraz longissimus dorsi (thoracis et lumborum) (LD) pełnomięsnych jałowic rasy nizinnej czarno-białej. Oznaczenia chemiczne mięśni surowych i grillowanych wykonywano zgodnie z Polskimi Normami, a rozpuszczalność kolagenu zmodyfikowaną metodą Liu i wsp. Analizę profilu tekstury (TPA) i pomiary siły cięcia mięśni grillowanych przeprowadzano przy użyciu teksturometru TA-XT2.Analizowane mięśnie wołowe różniły się podstawowym składem chemicznym oraz zawartością kolagenu. Wśród mięśni surowych najwięcej kolagenu rozpuszczalnego zawierał LD, a najmniej SM oraz BF, natomiast wśród grillowanych odpowiednio IS i TB. Rozpuszczalność kolagenu w mięśniach surowych i grillowanych po 14 dniach dojrzewania poubojowego zwiększyła się średnio o około 5,5 %, w porówna-niu z próbami po 2 dniach dojrzewania. Największymi wartościami twardości TPA i żujności TPA charakteryzowały się mięśnie ST i SM, a najmniejszymi SV, IS oraz LD. Wartość siły cięcia SM była najwięk-sza, a IS najmniejsza. Niezależnie od rodzaju mięśnia, wartości parametrów TPA twardości i żujności oraz siły cięcia zmniejszyły się po 14 dniach dojrzewania poubojowego odpowiednio o około 17 N i 6 N oraz 20 N.Słowa kluczowe: mięśnie wołowe, skład chemiczny, dojrzewanie poubojowe, kolagen rozpuszczalny, TPA, siła cięcia Wprowadzenie Mięso wołowe jest źródłem pełnowartościowego i łatwo przyswajalnego białka zwierzęcego.
