O abacaxi (Ananas comosus L. Merril) é um fruto de significativo valor nutricional, pode ser consumido processado ou in natura e é amplamente cultivado no território nacional, tendo o estado da Bahia especial participação. O alecrim de vaqueiro (Lippia aff. Gracilis), por sua vez, é uma planta tradicionalmente conhecida na caatinga e que apresenta forte ação antimicrobiana contra fungos e bactérias, devido a presença do timol e carvacrol. As geleias de frutas são alimentos ricos em energia, além de alternativas de método de conservação, de mitigação às perdas pós-colheita dos frutos e de agregar valor à produção. Diante disto, o presente estudo teve como objetivo produzir a geleia de abacaxi com alecrim de vaqueiro, caracterizá-la físico-quimicamente e avaliar sua aceitação por meio de análise sensorial. Na formulação das geleias, foram utilizados aproximadamente 1,5 Kg de polpa de abacaxi, 50% (m/m) de açúcar, 1% (m/m) de pectina comercial e testadas diferentes concentrações de alecrim de vaqueiro (0,0%, 0,1%, 0,5% e 1,0%). As formulações apresentaram características físico-químicas conforme exigido pela legislação e em harmonia com a literatura. A análise sensorial indicou boa aceitabilidade do produto, alcançando médias superiores a 7,0 em todos os atributos investigados, sendo a formulação F2 (0,1%) a de maior intenção de compra. Este trabalho demonstra que é possível obter uma geleia de abacaxi com adição de alecrim de vaqueiro, valorizando assim as matérias-primas regionais e fomentando o desenvolvimento socioeconômico local.
