Obserwuje się wzrost zachorowań wynikający z obecności drobnoustrojów chorobotwórczych w produktach spożywczych. Proces szacowania ryzyka umożliwia ocenę narażenia zdrowia człowieka na mikroorganizmy obecne w żywności. Narzędziem do ilościowej oceny zachowania drobnoustrojów w żywności są modele prognostyczne. Celem pracy była ocena przeżywalności bakterii Bacillus cereus w serach typu feta i mozzarella podczas przechowywania w temperaturze 3-15 ºC, przy użyciu impedymetrycznego systemu Bactrac oraz opracowanie wyników metodą mikrobiologii prognostycznej. Zastosowano aplikację DMFit i porównano parametry wzrostu z danymi uzyskanymi w programie prognostycznym ComBase Predictor (CP). Prognozy w CP pochodzą z danych uzyskanych na pożywkach mikrobiologicznych (zmodyfikowanych pod względem składu). Stwierdzono, że sery typu feta i mozzarella w przyjętych warunkach doświadczenia stanowiły dobrą pożywkę do rozwoju bakterii B. cereus. Uzyskane z doświadczeń oraz wyliczeń matematycznych modele wzrostu B. cereus podczas przechowywania serów typu feta i mozzarella różniły się od prognoz uzyskanych w programie CP. Parametrem wzrostu określającym bezpieczeństwo mikrobiologiczne serów typu feta i mozzarella był czas trwania lag fazy. S t r e s z c z e n i eCelem badań było określenie liczby pałeczek Listeria monocytogenes, którymi zanieczyszczono prób-ki sera typu mozzarella i przechowywano je w temperaturze: 3, 6, 9, 12, 15 21 i 37 °C. Pomiaru wzrostu liczby komórek L. monocytogenes dokonano za pomocą urządzenia Bactometer M64 (bioMérieux), stosując zmodyfikowane, selektywne podłoże mikrobiologiczne. Do podłoża BHI (bioMérieux) wprowadzono dodatek wybiórczy do bulionu Frasera i dodatek wybiórczy amonowo-żelazowy(III) dla Listeria (Merck). Otrzymane wyniki dopasowano do równania Baranyi'a i Robertsa i porównano z modelami prognostycznymi w programie ComBase Predictor. W wyniku przeprowadzonych badań zaobserwowano, że wraz ze wzrostem temperatury przechowywania tempo namnażania patogenu było większe, a wzrost liczby drobnoustroju następował także w warunkach chłodniczych. Zmodyfikowana pożywka mikrobiologiczna umożliwiła ilościowe określanie liczby komórek Listeria z wykorzystaniem urządzenia impedymetrycznego. Słowa kluczowe: mozzarella, Listeria monocytogenes, bezpieczeństwo żywności, mikrobiologia prognostyczna Wprowadzenie Listeria monocytogenes to Gramwelshimeri do rodziny Enterobacteriaceae. Pałeczka ta nazywana jest często "bakterią lodówkową", gdyż patogen może rozwijać się w warunkach chłodniczych (w zależności od składu fizykochemicznego środowiska), pomimo że jej optimum temperaturowe wynosi 30 -37 °C [2,5,6,18,29,31]. Pałeczki Listeria wywołują chorobę zwaną listeriozą. Na listeriozę narażone są głównie osoby mające nieprawidłowo funkcjonujący układ odpornościowy, osoby starsze, z chorobami nowotworowymi, z cukrzycą, marskością wątroby, alkoholicy,
