Przedstawiono wyniki badań dotyczące czynników warunkujących zawartość cholesterolu i produktów jego utleniania (PUCh) w wyrobach mleczarskich. Opisano wpływ gatunku i rasy zwierząt, okresu laktacji, sposobu żywienia oraz stanu zdrowotnego wymienia na poziom cholesterolu w mleku surowym. Uwzględniono wpływ czynników technologicznych: zwłaszcza obróbki termicznej i homogenizacji mleka, dodatku kultur starterowych o zróżnicowanym składzie oraz warunków przechowywania na poziom cholesterolu w produktach mleczarskich. Scharakteryzowano czynniki decydujące o powstawaniu PUCh w wyrobach mleczarskich. Słowa kluczowe: mleko, produkty mleczarskie, uwarunkowania surowcowe i technologiczne, cholesterol, produkty utleniania cholesterolu Wprowadzenie Cholesterol (5-cholesten-3ß-ol) jest alkoholem o wzorze ogólnym C 27 H 45 OH i charakterystycznym dla steroli 17-węglowym pierścieniu cyklopentanofenantrenowym połączonym z łańcuchem węglowodorowym przy C 17 dwoma grupami metylowymi przy C 10 i C 13 , grupą hydroksylową przy C 3 i jednym wiązaniu podwójnym w pierścieniu pomiędzy atomami C 5 i C 6. Cholesterol jest związkiem nierozpuszczalnym w wodzie, dlatego też w płynach ustrojowych transportowany jest jako składnik lipoprotein-globularnych cząstek w kształcie miceli, zbudowanych z hydrofobowego rdzenia, w którego skład wchodzą triacyloglicerole i estry cholesterolu, otoczony powłoką amfipatyczną, zbudowaną z białka, fosfolipidów i cholesterolu [19]. Ze względu na właściwości fizyczne i funkcjonalne, lipoproteiny dzieli się na klasy:
