However, since açai is a very perishable raw material, studies for 14 its preservation are needed. The açai powder production is a way to obtain products with low 15 moisture content, good stability and higher shelf life. This study aimed to investigate the 16 feasibility of drying açai in spouted bed, evaluating the operating conditions on the yield and 17 quality of the product. The experiments were conducted according to a central composite 18 design. Operating variables studied were: drying air temperature, airflow rate and 19 maltodextrin concentration. Process yield, moisture content and total anthocyanins content 20 were analyzed as responses. The process yield was positively influenced by all the variables 21 studied. The increase in temperature caused a significant reduction in the moisture content. 22Airflow rate was the variable that most influenced the degradation of anthocyanins. Applying 23 desirability function method, an optimal drying condition was found. Acacia gum is an important food emulsifier that presents poor instant properties which can be improved by fluidized bed agglomeration. This study investigated the influence of drying conditions on particle growth kinetics using an in-line particle size monitoring by spatial filter velocimetry. The drying conditions varied according to the binder flow rate and the fluidizing air temperature. The particle growth kinectis showed drying conditions dependence. At mild drying conditions the growth rate and the process yield were higher. The in-line particle size monitoring was useful to observe the influence of the drying conditions on the growth kinetics.Keywords: fluidized bed agglomeration; acacia gum; particle growth kinectis; in-line monitoring.
This work aimed to investigate the fluidized bed agglomeration and drying of a plant protein powder blend using açaí pulp binder in order to improve the powder physical and handling properties. The agglomeration improved the powder physical properties, facilitating its use in industrial and domestic applications. The açai pulp was a suitable binder since it provided a particle size increase as well as a powder incorporated with anthocyanins. The best condition (T= 75 ˚C, Q = 3.0 mL/min) resulted in the highest values of process yield and particle size, as well as a powder with an acceptable moisture content.
