Influencia de la temperatura y tiempo de fritura de papa (Solanum tuberosum) variedad Yungay en el color medido por visión computacionalInfluence of Temperature and Time Fried Potato (Solanum tuberosum) RESUMENEn el presente trabajo se evaluó el efecto de la temperatura y tiempo de fritura de papa, en la calidad sensorial del color, utilizando análisis de aceptabilidad y métodos de superficie de respuesta para determinar el color óptimo de los tratamientos y luego establecer rangos de características del color L, a, b mediante visión computacional. Las variables seleccionadas en el proceso fueron: tiempo entre 200 y 1200 s y temperatura de fritura entre 130 y 200 °C. Para la aceptabilidad se utilizó un panel de jueces no entrenados, por medio de la prueba hedónica se evaluó el atributo de color. Posteriormente se analizó estadísticamente los resultados mediante el método de superficie de respuesta a un nivel de significancia del 5%. La mejor combinación de tiempo de fritura y temperatura de fritura resulto ser la de 700 segundos y 165 ºC. Palabras clave: Papa, Fritura, Tiempo, Temperatura, Color y Visión Computacional. ABSTRACTIn this study, we evaluated the effect of temperature and time of frying potatoes in the sensory quality of color, using analysis of acceptability and response surface methods to determine the optimal color treatments and then set ranges. The variables selected in the process were: time (200 -1200 s) and frying temperature (130-200 ºC). For acceptability used a panel of judges untrained through hedonic test evaluated the color attribute. Then the results were analyzed statistically using the response surface method to a novel of significance of 5%. The best combination of frying time and frying temperature turned out to be the 700 seconds and 165 ° C.
Aceptabilidad de una bebida de maíz morado variedad canteño (Zea Mays L.) endulzada con Stevia (Stevia rebaudiana B.) y propóleos como potencial conservanteAcceptability of a purple corn variety canteño (Zea Mays L.) drink sweetened with Stevia (Stevia rebaudiana B.) and propolis as a preservative potential RESUMEN Fue evaluada la aceptabilidad para una bebida de maíz morado endulzada con Stevia cristalizada 100% natural, Ácido Cítrico como acidulante y propóleos diluidos en etanol al 8% como conservante. Como diseño experimental se utilizó un Diseño de Mezclas Simplex con Centroide Ampliado, a través de 10 tratamientos con diferentes concentraciones de Stevia entre 3,6 -4,67 g, Ácido Cítrico entre 1,5 -2,33 g y Propóleos entre 0,33 -1,0 g que fueron basadas en 1 Kg de bebida de maíz morado variedad canteño. La evaluación de la aceptabilidad, se realizó mediante un panel sensorial de 40 panelistas escogidos al azar, utilizando una escala no estructurada con puntuación de 1-10 para evaluar la aceptabilidad de la bebida preparada. Los resultados obtenidos mostraron que, para obtener una mayor aceptabilidad de la bebida de maíz morado variedad canteño (Zea Mays L.), los rangos óptimos en cuanto a concentración de Stevia son de 3,6-4,1 g/1 kg de bebida, ácido cítrico 1,92-2,33 g/1 kg de bebida, y propóleos 0,3-0,67 g/1 kg de bebida. ABSTRACTAcceptability was evaluated for a purple corn drink sweetened with crystallized 100% natural Stevia, Citric acid as acidulant and preservative diluted propolis. The experimental design was a Design Blends Simplex Centroid used Expanded through 10 treatments with different concentrations of Stevia between 3,6 -4,67 g, citric acid between 1,5 -2,33 g, Propolis between 0,33 -1,00 g wich were based on 1 kg of canteño purple corn drink variety. Assessing the acceptability, was perfomed by a sensory panel of 40 panelist chosen randomly, using and unstructured scoring 1-10 to assess the acceptability of brew scale. The results showed that, for greater acceptability of purple corn drink canteño variety (Zea Mayz L), optimum ranges, concentrations of Stevia are 3,6-4,1 g/1 Kg drink, 1,92-2,33 g citric acid/1 kg drink, and propolis from 0,3-0,67 g/1 kg drink.
