RESUMOEste trabalho explorou as vantagens do emprego de dióxido de carbono supercrítico e de líquidos pressurizados na extração de compostos bioativos do resíduo do mirtilo (Vaccinium myrtillus L.), seco e in natura. Na extração com líquidos pressurizados foram utilizados água, água acidificada e etanol em diferentes proporções, porém com temperatura, pressão e vazão constantes de 40 ºC, 20 MPa e 10 mL/minuto, respectivamente. Os extratos foram analisados e os melhores resultados foram encontrados nas condições de etanol e etanol + água, para as análises de compostos fenólicos e capacidade antioxidante. As antocianinas foram identificadas em maior quantidade nas amostras extraídas com água acidificada. Na extração com fluido supercrítico, foram utilizadas diferentes proporções de CO2, água, água acidificada e etanol e verificou-se que a melhor condição foi encontrada no experimento com 90% CO2, 5% água e 5% etanol, por apresentar maiores concentrações de compostos fenólicos, antioxidantes e antocianinas no extrato obtido, porém com menor rendimento. A quantificação de antocianinas por espectrofotometria resultou em concentrações superiores às encontradas por cromatografia líquida de ultra alta performance (UPLC). Posteriormente, os extratos obtidos nas condições com maior rendimento de antocianinas, e o resíduo de mirtilo, foram submetidos a nanofiltração. Entre as membranas testadas, a membrana de nanofiltração NF 270 apresentou maior retenção de compostos fenólicos, antioxidantes e, especificamente, a retenção de antocianinas foi maior que 90% pelos dois métodos de análise empregados, pH diferencial e UPLC.
