Children with Autism Spectrum Disorder (ASD) have digestive disorders, therefore their diet should be gluten-free and casein-free. Gluten-free and casein-free foods tend to be low in protein. ASD children who apply a gluten-free diet and casein have a lower calcium intake and low in bone density. Catfish flour with high protein and calcium content were expected to increase the nutritional value (protein and calcium) of cookies which gluten-free and casein-free. This study was aimed to determine the effect of catfish flour substitution towards acceptance and nutritional value of gluten and casein free cookies as an alternative snack for ASD children. This study was experimental research with Completely Randomized Design. Panelists of this study were children with ASD (4-6 years) and their parents as many as 40 people. There were 4 formulas in this study, F0 was control, and 3 substitution formulas. Percentage of Flour substitution were, F2 (2%: 2%); F3 (4%: 4%); and F5 (6%: 4%). Kruskal Wallis test showed no significant difference in the level on acceptance level in taste and aroma between F0, F3, and F5. The acceptability and nutritional value's ranking showed the best formula was F5. 100 grams of F5 cookies (protein: 6.75 g; calcium: 247.51 mg) can fulfill 19% of the protein and 24.8% calcium of children RDA (4-6 years). Gluten-free and casein-free cookies with catfish (Formula 5) with enough protein and high calcium can be an alternative snack for ASD children.
Weight and length of the fetus at birth Moringa leaves are known as herbs that have many properties. The study aimed to analyzed moringa leaf extract against tissue histology, serum protein levels, fetal conditions at birth from distended mice with malnutrition. The research design was a pretest post test control group design using 28 distended mice with malnutrition, divided into 7 groups with 4 mice -Group. In the treatment group given moringa leaf extract with a dose of 720; 850 and 1000 mg/day during pregnancy 19-21 days. We found the condition of malnutrition causes hepar tissue histology to deteriorate due to increased hepar cell death which affects decreased protein synthesis, but does not affect renal tissue histology. The administration of moringa leaf extract does not have an effect on the distending of malnutrition conditions both the results of histology of hepar tissue and kidneys, serum protein levels and fetal conditions at birth, but in distending without malnutrition (negative control) provides the best results of tissue histology, serum protein levels and provides the highest fetal weight and length compared to other groups.
This community service intends to assist Tikung Health Center foster grandmothers in becoming great grandmothers with healthy toddlers. Because the toddler's mother was at work, the foster grandmother program began with the Posyandu Toddler activity, which was attended by grandmothers taking their grandchildren. As a result, support is still required to improve grandmothers' and grandchildren's nutrition and health awareness. Nutrition education for the elderly, parenting and nutrition education for toddlers, nutrition counseling services and blood glucose checks, and community empowerment through cassava processing competitions (local foods) are all part of this program. The program went off without a hitch, thanks to the foster grandmothers' joyful reception and a lot of help from cadres, PKK, village officials, and the Tikung Health Center in Lamongan Regency. Foster grandmothers' knowledge of parenting and nutrition is also increased, as is their ability to process many varieties of processed cassava, which can provide income opportunities for foster grandmothers and their family.
Diabetes is a major public health problem. For diabetics, diet shows great potential in controlling blood glucose levels by practicing regular eating patterns, either snacking between meals. Then, it’s important to consume foods with a low glycemic index, meanwhile fulfill daily protein and fiber intake. This study aims to identify organoleptic tests, along with analysis of fiber and protein levels from the best organoleptic test results. This type of research was a pre-experimental design on 3 groups velva. Organoleptic tests were performed on 25 trained panelists using purposive sampling. Analysis technique uses kruskall wallis and mann whitney test. Also, laboratory tests for fiber and protein levels. The results of this study are diabetics have a daily calorie requirement of 1,500 kcal. Moreover, 150 kcal is required for one snack, 7.5 g of protein and 2.5 g for fiber is needed. In addition, based on the results of the organoleptic test, the best velva is formulation 3 (KN 03). The average value obtained from 25 panelists is 3.38. The fiber content contained in the formulation 3 velva is 3.19 g/100 g. Meanwhile, the protein content per 100 g is 8.68 g. The conclusion of this study is that diabetics can consume velva at a rate of 1 cup (100 g) with 151.9 kcal calories per snack consumption to meet 10% of their daily fiber and protein needs. The implication of this research is to find the best velva formulation with high fiber and protein levels for diabetics
The Nahdlatul Ulama Health Institute (LKNU), Puskesmas in the Jember Region and Poltekkes Kemenkes Surabaya held community service activities aimed at reducing the prevalence of stunting under five. The activity began with family assistance for pregnant women and stunting toddlers, which were attended by 112 mothers of toddlers and 40 pregnant women, and continued with nutrition education conducted by nutrition counseling with media in the form of posters, flipcharts and games. The third is the provision of nutritional intake for pregnant women and toddlers through Supplementary Food Provision (PMT), and the last is demonstration of examples of balanced nutrition for toddlers according to the principle of balanced nutrition through the use of local food ingredients. The results of the activity revealed an increase in the knowledge of pregnant women and mothers of toddlers by 47%, an increase in the attitudes of pregnant women by 4% and mothers of toddlers by 1.9%, as well as an increase in the practice behavior of pregnant women and mothers of toddlers in preparing and providing a balanced nutritional menu of local food.
Moringa leaves (Moringa oleifera) have chelating agent properties that act as natural antioxidants in binding heavy metals and free radical scavengers, with cadmium being one of the heavy metals free radicals having toxic effects on the body. Exposure to cadmium can reduce the activity of lipoprotein lipase enzymes (LPL) which function in the triglycerides and free fatty acids catabolism process, and can increase cholesterol and triglyceride levels in the blood. This study aims to determine the effectiveness of Moringa (Moringa oleifera) on Cadmium chloride-induced white rats (Rattus norvegicus) using an experimental research design with a quantitative analysis technique. This study uses the level of cadmium and LDL cholesterol for the dependent variable and the dose of Moringa leaf extract (Moringa oleifera) for its independent variable. The samples used are white rats (Rattus norvegicus) aged 8-12 weeks with a weight of 150-200 grams, along with blood drawn from the heart for the specimen. The researcher conducted the study at the Faculty of Veterinary Medicine, Airlangga University; Surabaya Health Laboratory Center; and Surabaya Bakti Analysis Laboratory from October 2021 to June 2022 using Atomic Absorption Spectrophotometry (AAS) and Chemical Analyzer BS-200. The results show that the average value of cadmium and LDL cholesterol levels in white rats in treatment group 1 are 0.605 g/dL and 8.25 mg/dL, group 2 are 0.075 g/dL & 18.5 mg/dL; and group 3 are 0.08125 g/dL and 12 mg/dL. Based on the statistical analysis of the One-Way ANOVA test, the sig. p-value is > 0.05. Thus, the average value of cadmium and LDL cholesterol has no significant difference. Compared to the 400 mg/kgBW and 500 mg/kgBW, the 600 mg/kgBW dose has the best effectiveness in reducing LDL cholesterol in white rats (Rattus norvegicus) after being induced with cadmium chloride. This study recommends consuming fresh Moringa leaves (Moringa oleifera) as much as 66.522 grams per human/day as an additional antioxidant and chelating agent.
