A partir de 2008 el precio real de la leche de cabra se ha mantenido a la baja. Ante la imposibilidad de negociar una mejora, algunos caprinocultores han optado por transformarla en queso artesanal. Esta investigación permite conocer los retos y oportunidades al tomar esta decisión. El objetivo fue analizar las causas que limitan la participación y el posicionamiento en el mercado de empresas de caprinocultores productoras de queso fino, ubicadas en Guanajuato, México, con el fin de identificar alternativas orientadas a incrementar ventas. El estudio se realizó bajo el enfoque de red de valor y se aplicaron encuestas semi-estructuradas a los diferentes actores que la integran; la información permitió identificar flujos comerciales, formación de precios, problemas percibidos y su complejo causal. Se encontró que las empresas tienen débil posicionamiento en los mercados y limitada participación en venta directa a detallistas en mercados potenciales. La escasa diferenciación de productos y el bajo poder de negociación con sus compradores son las principales causas. A partir de esos hallazgos, se propone gestionar innovaciones en productos, procesos y mercadotecnia.
Se analizan vínculos sociales y su relación con la adopción de buenas prácticas agrícolas en café desde el enfoque de las redes sociales. Se aplicaron entrevistas semiestructuradas sobre aspectos socioeconómicos, adopción de buenas prácticas de producción y relaciones sociales a 67 cafeticultores. Los productores de café tienen superficies y rendimientos promedio de 2.4 ha y 1.9 t/ha-1 respectivamente. Las prácticas adoptadas están relacionadas con el manejo del cultivo, control de plagas y uso de nuevas variedades. Existe una baja densidad de vínculos que indican escasa conectividad entre productores, nodos de investigación y proveedores. La estructura de relaciones bajo el escenario actual dificulta el proceso de adopción de buenas prácticas agrícolas por la baja vinculación a fuentes externas de información.
Abstract. More than 70% of startups in Mexico fail during their first years of operation, mainly due to lack of strategic guidelines. Cafetalera Alianza, a micro company that sells ground coffee in Monterrey, Mexico, has three years of operations without being able to grow and consolidate in the market. To design a business plan that reduces the risk of failure, strategic tools are used such as the value net (Nalebuff et al., 1996), the ERIC matrix (Mauborgne et al., 2005) and the canvas model (Osterwalder et al., 2011). Más de un 70% de las nuevas empresas en México fracasan durante sus primeros años de operaciones, principalmente por falta de directrices estratégicas. Cafetalera Alianza, una microempresa que comercializa café molido en Monterrey, México, tiene tres años de operaciones sin poder crecer y consolidarse en el mercado. Para diseñar un plan de negocios que reduzca el riesgo de fracasar, se utilizan herramientas estratégicas como la red de valor (Nalebuff et. al., 1996), la matriz ERIC (Mauborgne et. al., 2005) y el modelo de canvas (Osterwalder et. al., 2011).
