The aim of the present study is to characterize the productive capability of Utrerana and to compare the relationships among parameters determining the internal and external quality of the egg, through canonical correlation analysis. A flock of 68 Utrerana hens and a control group of Leghorn hens (n = 17) were housed individually to allow individual identification of eggs and for the assessment of egg quality characteristics. Almost all variables showed differences when both breeds were compared, except for white height, yolk diameter, yolkL* and yolk pH (p > 0.05). Only minor diameter, white height, yolkL*, yolka*, and shell weight reported significant differences between laying age groups. White height, yolk color, and almost all yolk color coordinates were significantly different (p < 0.05) for period and month. Egg and white weight reached highest significantly different levels for the fourth and fifth time that the hens laid an egg. External quality-related traits are better predictors of internal quality-related traits than vice versa, enabling the implementation of an effective noninvasive method for internal quality determination and egg classification aimed at suiting the needs of consumers.

This study aimed to develop a tool to perform the morphological characterization of Sureña and Utrerana breeds, two endangered autochthonous breeds ascribed to the Mediterranean trunk of Spanish autochthonous hens and their varieties (n = 608; 473 females and 135 males). Kruskal–Wallis H test reported sex dimorphism pieces of evidence (p < 0.05 at least). Multicollinearity analysis reported (variance inflation factor (VIF) >5 variables were discarded) white nails, ocular ratio, and back length (Wilks’ lambda values of 0.191, 0.357, and 0.429, respectively) to have the highest discriminant power in female morphological characterization. For males, ocular ratio and black/corneous and white beak colors (Wilks’ lambda values of 0.180, 0.210, and 0.349, respectively) displayed the greatest discriminant potential. The first two functions explained around 90% intergroup variability. A stepwise discriminant canonical analysis (DCA) was used to determine genotype clustering patterns. Interbreed and varieties proximity was evaluated through Mahalanobis distances. Despite the adaptability capacity to alternative production systems ascribed to both avian breeds, Sureña and Utrerana morphologically differ. Breed dimorphism may evidence differential adaptability mechanisms linked to their aptitude (dual purpose/egg production). The present tool may serve as a model for the first stages of breed protection to be applicable in other endangered avian breeds worldwide.

Goat milk casein proteins (αS1, αS2, β and κ) are encoded by four loci (CSN1S1, CSN1S2, CSN2 and CSN3, respectively) clustered within 250 kb in chromosome 6. In this study, 159 Murciano‐Granadina goats were genotyped for 48 SNPs within the entire casein region. Phenotypes on milk yield and components were obtained from 2,594 dairy registries. Additive and dominance effects on milk composition and quality were studied using non‐parametric tests and principal component analysis to prevent SNPs multicollinearity. Two deletions in exon 4 (CSN1S1 and CSN3), one in exon 7 (CSN2) and one in exon 15 (CSN1S2) have been found at frequencies ranging from 0.12 to 0.50. Bonferroni‐corrected significant SNP additive and dominance effects were found for milk yield, fat, protein, dry matter and lactose, and somatic cells. Exons 15 and 7 were significantly associated with milk yield and components except for lactose and somatic cells, while exon 4 was significantly associated with milk yield and components except for protein and dry matter. SNPs' associations with somatic cells were less frequent and weaker than those with milk yield and components. As caseins increase, somatic cells decrease, reducing milk enzymatic activity and consumption suitability. Hence, including molecular information in breeding schemes may promote production efficiency, as selecting against undesirable alleles could prevent the compromises derived from their dominance effects.

Genetic diversity and population structure were analyzed using the historical and current pedigree information of the Arabian (PRá), Spanish Purebred (PRE), and Hispano-Arabian (Há) horse breeds. Genetic diversity parameters were computed and a canonical discriminant analysis was used to determine the contributions of ancestor breeds to the genetic diversity of the Há horse. Pedigree records were available for 207,100 animals born between 1884 and 2019. Nei’s distances and the equivalent subpopulations number indicated the existence of a highly structured, integrated population for the Há breed, which is more closely genetically related to PRá than PRE horses. An increase in the length of the generation interval might be an effective solution to reduce the increase in inbreeding found in the studied breeds (8.44%, 8.50%, and 2.89%, for PRá, PRE, and Há, respectively). Wright’s fixation statistics indicated slight interherd inbreeding. Pedigree completeness suggested genetic parameters were highly reliable. High GCI levels found for number of founders and non-founders and their relationship to the evolution of inbreeding permit controlling potential deleterious negative effects from excessively frequent mating between interrelated individuals. For instance, the use of individuals presenting high GCI may balance founders’ gene contributions and consequently preserve genetic diversity levels (current genetic diversity loss in PRá, PRE, and Há is 6%, 7%, and 4%, respectively).

Affine and non-affine profiles were defined based on the information provided by sixty-four professionally-instructed panelists on sensory attributes, diet habits, production context awareness, product consciousness, cuisine applicability and panelist attributes. Egg consumption was lower in non-affine profile professionals, as were the scores provided to sensory attributes. The higher the knowledge about Utrerana breed, the greater the importance provided to the ecological and autochthonous nature of the products. The level of study, gender and age are crucial factors to consider when approaching the commercialization of Utrerana hen eggs. Conclusively, defining consumer profiles among professionals of the cuisine sector may improve the profitability of Utrerana eggs and may help educating non-affine profiles, something key to the success in product appreciation.AbstractThis study aimed to compare Utrerana native hen eggs’ sensory properties to Leghorn Lohmann LSL-Classic lineage’s commercial and ecological eggs through free-choice profiling. Second, affine and non-affine profiles were defined using the information provided by professionally-instructed panelists on six sets (sensory attributes, diet habits, production context awareness, product consciousness, cuisine applicability and panelist attributes) using nonlinear canonical correlation analysis. Sixty-four instructed professional panelists rated 96 eggs on 39 variables comprising the above-mentioned sets. Observers reported a significantly higher appreciation (p > 0.05) towards yolk color, odor, flavor, texture, overall score, and whole and on plate broken egg visual value when Utrerana eggs were compared to the rest of categories. Professional Profile A (PPA), or egg non-affine profile, consumed less eggs and provided lower scores to sensory attributes than Professional Profile B (PPB), or affine profile. Additionally, PPB accounted for higher knowledge about the Utrerana breed and provided greater importance to a product’s ecological and autochthonous nature. PPA was generally characterized by women under 20 years old with no higher studies, while PPB comprised 21–40 years old men with secondary studies. In conclusion, defining professional profiles enables correctly approaching market needs to improve the profitability of Utrerana eggs, meeting professional demands and educating non-affine profiles.

Simple Summary: The first step towards the protection and valorization of the genetic resources of a country is their definition. Although Ecuadorian zootechnical species are very diverse, they are scarcely characterized, and hence the efforts towards their protection are not as fruitful as they could be. The present paper approaches the biometric characterization of the Creole hen population in Ecuador through the study of sexual dimorphism and the differentiation of an agroecologically-based structured population using fourteen zoometric measures as differentiation criteria. Highlands region provinces of Cotopaxi and Tungurahua were the most zoometrically distant from the rest. However, Morona Santiago province population in the Amazonian region slightly differs from those in Guayas, Chimborazo and Bolívar in the Coastal and Highlands regions, respectively. The dual-purpose nature of Ecuadorian Creole hen resources enables the implementation of breeding programs that seek meeting a wider scope of public demands, through the definition of the agroecologically-based breed differentiated production of local hen eggs and meat.Abstract: Despite Ecuador having a wide biodiversity of zootechnical species, characterization studies of these genetic resources are scarce. The objective of this research was to perform the biometric characterization of the Creole hen population through 14 quantitative zoometric measures. We evaluated 207 hens and 37 roosters from Ecuador's three agro-ecological regions: the Sierra (highlands) region (Bolivar, Chimborazo, Tungurahua and Cotopaxi provinces); the Costa (coastal) region (Guayas); and the Oriente Amazonian region (Morona Santiago). Sexual dimorphism was assessed using one-way analysis of variance (ANOVA). Body dimensions were generally significantly higher for males (p < 0.05), especially for length of head, beak, neck, dorsum, tarsus, thigh, leg, and middle finger. Then, individuals were biometrically clustered into populations after a stepwise canonical discriminant analysis (CDA) computing interpopulation Mahalanobis distances. Agroecologically-based structured populations were identified when zoometrical criteria were used to classify the animals. Cotopaxi and Tungurahua provinces were reported to be the most distant from the rest, with a slight differentiation of the Morona Santiago province population from those in Guayas, Chimborazo and Bolívar. Scientific evidence for intelligence in donkeys could expose their historical unmerited cognitive derogatory status. Psychometric testing enables quantifying animal cognitive capabilities and their genetic background. Owing to the impossibility to use the language-dependent scales that are widely used to measure intelligence in humans, we used a nonverbal operant-conditioning problem-solving test to compute a human-analogous IQ, scoring the information of thirteen cognitive processes from 300 genetically tested donkeys. Principal components and Bayesian analyses were used to compute the variation in cognitive capabilities explained by the cognitive processes tested and their genetic parameters, respectively. According to our results, IQ may explain over 62% of the cognitive variance, and 0.06 to 0.38 heritabilities suggest that we could ascribe a significant proportion to interacting genes describing the same patterns previously reported for humans and other animal species. Our results address the existence of a human-analogous heritable component and mechanisms underneath intelligence and cognition in probably one of the most traditionally misunderstood species from a cognitive perspective.
